Our client, a player in the confectionery industry, based in Anthony Village, Lagos needs a Production Officers for cakes.


Job Summary:

The Production Officer use their understanding of ingredients and food preparation to bake cakes, create artistic decoration designs, decorate cakes in accordance to customers’ specifications and preferences, and freestyle where customers have not provided any specifications. The position is responsible for the preparation and baking of all cake products. The Production Officer will also recommend suitable design options and prepares all materials and equipment required for cake decoration. The position requires adherence to health and safety standards, and the maintenance of cleanliness of workstations while executing duties. In addition, the Production Officer must be familiar with decorating and modelling tools, know various design techniques and should possess excellent customer service skills.

The Production Officer will report to the Operations Manager.


Job Responsibilities (Baking):

• Ensure cakes are baked following the recipe instructions and following customers’ special requests (e.g. gluten-free, sugar-free, diabetes-friendly, etc.)
• Ensure that oven temperature is in accordance with the type of cake to be baked and adjust the thermostat to ensure the appropriate level of heat is transmitted.
• Check that ingredients and materials meet health and safety standards.
• Check the reorder level of cakes on the available cakes table and ensure all cakes produced are documented in process 1, 2 and 3 formats.
• Adhere to Company’s standards as regards cake preservation, presentation, handling, and inventory controls.
• Maintain baking equipment and utensils in good condition and consistent with health and safety standards.

Job Responsibilities (Cake Decoration):

• Suggest suitable cake designs and decoration options according to customer specifications. Also ensure clean finishing, sharp edges, and straight lines. Use a plum to always check that the cake is perfectly levelled and also ensure that fondant does not have the appearance of an “elephant’s skin”.
• Consult with customers to discuss desired cake designs and cake decorating ideas for speciality cakes.
• Prepare required decorating products, materials and equipment (like icing, piping tips and bags, etc.)
• Design and decorate cakes in different styles and using different products (whipped cream, fondant and buttercream).
• Produce different kinds of icing, frosting, and cake fillings based on cake type and customer preferences.
• Use different decorating and modelling techniques and equipment for creating intricate designs.
• Perform packaging of decorated cakes and supervise delivery. Make cake boxes to package decorated cakes.
• Ensure decorated cakes are logged in the system as finished goods before delivery to customers.
• Complete assigned duties in time to meet customers’ delivery deadlines.
• Maintain weekly inventory of cake decorating ingredients, items and materials. Also monitor the shelf life of cake decoration products, colours, and accessories.
• Timely create and submit internal requisitions for decorating accessories, materials and equipment reorders, to avoid stock out and emergency purchases.
• Store all bakery materials and equipment in accordance with proper handling procedures to prevent contamination and damage.
• Sanitize and maintain the cleanliness of bakery equipment and workstations at all times, and adhere to Company’s health and safety standards.
• Provide excellent customer service as and when required.


Qualifications:
• Diploma in Catering and Hotel Management, Bakery and Confectionary.
• Certification course in cake decoration and/or pastry arts.
• 3 – 5 years previous experience with cake decoration in a bakery, catering outfit or hotel.
• Previous experience working with various decorating and modelling tools.


Skills:
• Creative and detail-oriented. Also must have a steady hand when using different decorating materials.
• Time Management. The position requires focusing on different activities at the same time, and the ability to adjust as required to accommodate shifting priorities.
• Flexibility. Ability to fulfil long working hours to meet customers’ deadlines.
• Work hours can last anywhere from 8 to 16 hours, and workdays include Saturdays, Public Holidays and may include Sundays, depending on work schedule and customers’ delivery deadlines.
• Initiative and Problem-Solving. Ability to work with minimal supervision and with a problem-solving mindset.
• Customer Focused. Excellent customer service skills. Work effectively with external customers to meet expectations and timely resolve any issues.
• Effective Communication. Effective written and spoken communication (including chats and voice notes) with the production and delivery teams, and also with supervisors, to ensure team goals and deadlines are always met.
