If a hacker hacks just 40 google accounts, it puts Google database at risk and not you the user and they've experimented with their own backend security technology that passkeys are safer and easier for them to quickly detect a hacker and stop him or her. So, for now, hackers may not have the tech to bypass passkeys and that's where these companies are coming out strong

Wrong!!! They are not collecting your biometric data. Everything is stored on your local device and encrypted. It is not stored anywhere else. That is how fingerprint/face ID technology works currently on your phone.

Answer: they save evidence of the fact that you have verified your identity by means of biometrics. They don't and will never save your actual biometrics data. Those are only stored on your device and is by design not accessible to anyone else. It is a bit difficult to explain but I hope you get the point.
