I have a question that bugs me a little bit. Is it true that when you wash out the skin of beans, you wash off the protein? i have heard it that moin moin and akara don't give protein cuz you've peeled the skin. boiled and cooked bean = more protein peeled skin = less/no protein. how true? |

I wouldn't say so the peeled bean still has a lot of protein and I would guess they have the same amount of protein both the peeled and unpeeled . although the unpeeled would have more calories than the peeled. I would also suspect that the outer skin of the bean is not made of protein but cellulose which is a form of carbohydrate but not digested by humans. Both peeled and unpeeled beans have the same amount of protein. |

The protein is in the beans itself, not the skin. |
