the best meat is either goat meat or chicken either frozen or live chicken
1 meat as mentioned above
2 dry fish
4 uziza leaf
5 utazi leaf
7 maggi n okpei(optional but it makes d soup to come out well)
8 ashi or small pounded yam that will serve as a thickner
note to remenber pls d utazi n uziza will not be muchoooo just 10naira utazi cos it has a little bitter taste and 20naira uziza cos of d flavour
boil yr meat to be soft n ensure u season with salt ,maggi n small onions
as the meat is gd fr eating, add yr well washed dry fish, grinded crayfish and pepper, grinded okpei n maggi.small ashi or small pounded yam fr thickner salt to taste.
u can add a little red oil and den wash n cut yr utazi n uziza leaf and add waooooo by now d soup is making meaning by sending a pleasant aroma outside.allow d poudedyam to dissolve very well.
u can add pepper a little bit of pepper to make it a little pepperish n ushhhhhhhh yr soup is ready
serve with pounded yam in yr in-laws will be singing praises to u

Okpei is a local ibo seasoning,kind of like iru for the yorubas and dadawa for the hausas.its usually wrapped up in leaves and is very smelly,but gives ur soup a wonderful flavor
Ashi or achi is a soup thickner,its kinda like flour,but white soup/nsala soup is always nicer when yam is used as a thickner

hello thanks for sharing, for vegetarian I have something:
1 large onion, diced
1 stalk celery, diced
3 cloves garlic, minced
1 tablespoon butter
3 heads broccoli
6 cups chicken stock
Salt and pepper to taste
Cayenne pepper to taste
1/2 cup light sour cream (optional)
4 tablespoons jalapeño-infused olive oil (optional)
Saute the onion, celery, and garlic in butter until translucent.
Trim the broccoli into one-inch pieces and blanch them in salty water.
Add the broccoli to the vegetable mixture.
Add the chicken stock. Simmer for 10 minutes.
Simmer for 10 minutes then pass the mixture through a strainer, food mill, or blender.
Season soup to taste with salt, pepper, and cayenne. Top with sour cream and a drizzle of olive oil. Serve hot.
