Engine operating temperature, and engine emissions, pay a vital role in basic fuel economy.

The mechanical thermostat is there to restrict the flow of coolant until engine temp reaches required state. The electrical fans are controlled by the engine ecu to start functioning only when the operating temp has reached threshold and stop running at a predetermined temp.

The oxygen sensors are there to monitor exhaust gasses so that the engine ecu can tweak the injector pulses, vary the timing patterns, and switch the egr settings.

All these have to happen to get optimal fuel economy.

In answering your question I will have to also be practical .

If you have been running your engine on water for a long time, there is a high probability that the Aluminum water channels and joints and thermostat housings and water pump might be corroded . Removing thermostat and placing fans directly reduces the pressure within the coolant system which makes it less prone to leaks from corroded areas.

My advise would be to inspect the coolant system , before restoring connections and thermostat. Replace the radiator with a brand new unit, replace the faulty oxygen sensor.

All should be fine after that.

You currently have a drivable car, if you cannot do the restoration by the book, do not start, because it might leave you with a damaged engine and an undrivable car.
