that prophecy that Matthew 2:23 talks about doesn't seem to exist in any of the above listed books, nor anywhere in the old testament. Where did Matthew come about that prophecy?

It's either the writer of Matthew, manufactured that verse, or the reference in the books of prophets was expunged.
