Thousands of these beauties swarmed towards my window after the downpour yesterday so I did a little close-up shoot with my phone. It's the Flying termite commonly called Alates termite and scientifically called Coptotermes formosanus (just imagine it's in italics �). In Nigeria (especially the eastern and western parts), termites are usually roasted and eaten as food, mostly during the rainy season. The flying termites are usually collected while flying or after their wings have fallen off, during collection, these termites are added in bucket or bowl of water after which they are properly cleaned. Termites are a good source of food, being rich in proteins, fats, vitamins and many essential mineral nutrients and hence provide food security for the poor households and snacks for the rich. The delicious delicacy is called Aku in Igbo, but Yorubas call it E sun sun. Though I have lived in the eastern part of Nigeria for a year and have had the privilege of enjoying several native Igbo delicacies, I'm yet to have a taste of Aku. There are two kinds of beard styles, goatee and Van Dyke, which are adopted and worn by men. Both of them are usually very popular, but Van Dyke is frequently more popular, and it is also believed to be the professional look. Both the styles are often perplexed because of their correspondence. There is a lot of confusion among the people with respect to goatee and Van Dyke. Though both of them are very closely related, yet a thin line of difference can be drawn upon them to understand the beard style better. GOATEE Goatee is a beard style in which the beard is grown only on the chin. There is no connection to the hair which grows on the upper lip, added to it, there are also no sideburns. It does not include the growth of mustache. Goatee can be further categorized in two categories in form of long and short. The term is derived from the long hair grown on the chin of goats. The goatee only includes the raise of short or long pact of hair on the chin. On the other hand, Van Dyke is little different from goatee, as it contains mustache. This is the only difference between goatee and Van Dyke. Later, the style of Van Dyke has also become famous by the name of Van Dyck after the 17th century which represents the style of a painter by the name of Sir Anthony Van Dyck. Earlier Van Dyke was worn by men with a curly mustache, but now a day it is worn with a thick mustache and without curling the moustache upwards VAN DYKE Van dyke is an alternative of goatee and some people also refer the classic goatee to Van Dyke. If the hair grown on the chin is very long than it is also called as chin beard. Another alternative of goatee which has become famous is the beard on chin connected to the side burns transversely to the bottom of the chin and up the cheeks. The side burns are raised to meet the hair on the lower cheeks and the jaw. These all are done in the absence of mustache. This type of look is commonly known as the chinstrap or chinstrap beard. Other differences between goatee, Van Dyke and other types of beard are, when a Van Dyke join the goatee to the mustache, a circle beard type of look is formed. Many people called this style simple Van Dyke whereas others call them as classic Van Dyke. But the Van Dyke is a combination of goatee and mustache and does not require connecting the both to each other. When the beard is grown on the chin and rises to the neck, than it is known as neck goatee. This look is often worn by the youngster because of its bold look. |

BROMATE FREE Am sure most of us have seen this phrase on the labels of bread, snacks etc. what does it really mean? Growing up, I always came across the phrase "BRO MATE FREE" on the label or wrapper of bread, yes, of course I never understood the meaning.. Am sure it's not just me... WHAT IS BROMATE? Potassium bromate, or simply called bromate, is an oxidiser used to strengthen dough and enhance its elasticity. This helps bake uniform and whitened bread. Typically 15-30 parts per million (ppm) of potassium bromate is added to dough. Normally, baking changes its chemical composition and renders it harmless, leaving no trace in the finished product. However, if too much of the additive is used, or the bread is not baked long enough or at a high enough temperature, then a residual amount will remain. POPULARITY Potassium bromate is cheaper and more widely available than other food additives, and gives a better end-product. In a low-margin, high-volume and perishable food product like bread, cost and end-product does matter. DANGER In 1964, an expert committee administered by the World Health Organisation and Food and Agriculture Organization started evaluating potassium bromate. In 1983, it temporarily accepted a limit of 75 ppm provided there are negligible residues in the end product, on the understanding that all bromate gets converted into bromide during baking. This limit was later reduced to 60 ppm. After long-term studies, potassium bromate was considered a ‘genotoxic carcinogen’. In 1992, the committee decided that using potassium bromate as a flour treatment agent was “not appropriate”, also considering there were alternatives. In 1999, the International Agency for Research on Cancer (IARC) classified potassium bromate as possibly carcinogenic to humans. In 2012, the Codex Alimentarius, an international food safety reference agency run by the WHO and FAO, formally withdrew specifications of potassium bromate in line with the expert committee view. BAN The European Union, China, South Korea, Sri Lanka, Canada, Australia, Brazil, Peru and Columbia have banned the use of potassium bromate as a flour treatment agent. The EU has banned potassium iodate as well. India and the US continue to allow use of potassium bromate in permissible limits. India allows use of potassium bromate and/or iodate up to 50 ppm on flour mass basis, while the US allows it up to 75 ppm and manufacturers must list the ingredient on food labels. However, the US officially urges bakers not to use potassium bromate; in California, food containing potassium is required to have a warning label. Many US bread and bakery manufacturers have voluntarily stopped using it. ALTERNATIVES Ascorbic acid or Vitamin-C is considered a healthy alternative to potassium bromate. Glucose oxidase is another option approved by FSSAI in 2015. Other food improvers and flour treatment agents approved by law include ammonium persulphate, ammonium chloride and amylases. CONCLUSION with references to various research made by the WHO and other notable organizations, potassium bromate or simply bromate is a carcinogenic food additive. Though the advantages of this additive cannot be overlooked as its relatively cheaper, more common and it produces a white, soft and better dough when compared to other additive, but the disadvantage of its carcinogenicity as it leads to cancer of the kidney and thyroid when tested with Rats and Mice cannot be overlooked. NIGERIA In our great country Nigeria, it's hasn't been banned, but bread producing factories have taken it upon themselves to voluntarily indicate their product is bromate free for sake of integrity and in a case of necessity.
