I don't know whether you refering to the already prepared pap with hot water, or you talking about the fermentation stage(raw corn).

Haba, and over the past how many months now, was this conversation? And you didn't even bother to ask or consult further. What we are doing on this kind of challenges is to share experiences of people's health issues and if the symptoms are the same or similar, then it may help you.

There's nothing like raw corn fermentation stage.

A freshly produced pap, (that is before it's prepared into the drinking pap, which is by pouring hot water in it and stirring it up to form the paste) in raw form is usually not sour.

But when purchased can be kept in an open cup with little water to top it for like three or more days to become sour.

In the western states it's possible to get produced sour pap on request for sale. It's just like when you hear, in the Garri market, fresh Garri and Garri Ijebu or Yoruba Garri. Garri Ijebu is slappy when soaked in water than the freshly made Garri that's better for Eba.

So it's the sour produced pap that you now prepare or turn for your drinking, but ensure that it is slappy when you taste it. I also advise that even the water used to top the freshly produced pap can be drunk if it's really sour for more and quick regenerative flora build up in the stomach. It's an attempt to neutralize the already worn out or acidic walls of the intestines by the introduction of good microbes from the sour pap.

Good microbes restore digestive health by improving digestion, boosting immunity, and fighting bad bacteria, primarily through probiotic foods ( yogurt, kefir, kimchi, kombucha) and prebiotic fiber (veggies, fruits, whole grains) that feed them, leading to a balanced, diverse gut microbiome that reduces inflammation and supports overall wellness.
