Learning the baking basics for beginners will give you an edge above other bakers. Baking is far much more than just mixing ingredients. Baking is a science that involves chemical reactions to bring about a final product.

What is Baking?

Baking is the method of preparing food using dry heat usually in an oven. People have created other means of baking with hot stones or hot ashes over time. This helps people who do not have access to ovens.

With so many recipes accessible everywhere, it may be very confusing for a beginner. This post helps to give you a guide on 10 basic baking ingredients used in baking and their functions.

Baking is an exciting and rewarding hobby that has been around for centuries. It’s a great way to relax, express your creativity, and enjoy delicious treats. However, if you’re new to baking, the process can be overwhelming. That’s why we’ve put together these beginners baking basics to help you get started.

Flour
Flour is a powder made from grinding cereal grains. It is good for baking cakes, pastries and bread. There are several types of flour, they include:

1. All purpose Flour– Best used for all types of cakes, pastries and bread.
2. Cake Flour– Best used for cakes, muffins and biscuits.
3. Pastry Flour– Best used for cakes, muffins, pancakes, biscuits, pie crusts and bread sticks.
4. Bread Flour– Best used for breads and pizza dough.
5. Self Rising Flour– Best used for pancakes, biscuits and scones.
6. Whole Wheat Flour– Best used for cookies, breads, pancakes, pizza dough and pasta.
7. White Whole Wheat Flour– Best used for bread, muffins and cookies.
8. Gluten free Flour– Best used for cakes, muffins, pancakes and bread.
9. Al mond Flour– Best used for cookies, muffins, pancakes, biscuits and bread.
10. 00 Flour– An Italian type of flour that has a super fine texture with the ability to be rolled extremely thin without breaking. It is best good for pasta, pizza dough, crackers, couscous, flat breads and thin crust.
The best way to store flour is in an airtight container and in a dry and dark place like a store or a pantry to enable it last long and fresh.

Sugar
Sugar keeps baked foods moist and soft. It combines perfectly with water to lock in moisture in cakes, muffins, breads and other pastries so they do not dry out easily.

Sugar gives sweetness to baked foods, it is important for creaming batters. It also helps to activate yeast for fermentation. Sugar also helps to improve and increase the life span/shelf life of baked foods.

It is safe to say that sugar is indispensable in baking. Although, recently, recipes excluding sugar are developing to create room for people living with diabetes to also enjoy baked foods.

Sugar can be stored in an odour free airtight container and in a cool place. DO NOT store sugar in a refrigerator as moisture makes it lumpy and difficult to use.

Eggs
Eggs are one of the most nutritious foods on the planet. The reason is because they contain all the nutrients required to turn a single cell to a baby.

In baking, chicken eggs are commonly used. Eggs play an important role in baking and food production. They provide stability and structure and they also help to give moisture to baked foods. Because of their high protein content, they help to bind ingredients together.

It is important to use FRESH EGGS in baking and food production. The fresher the eggs, the better the flavour. Fresh eggs also help cakes and pastries rise at their best.

How can you tell that your eggs are still fresh?

Butter
Butter is a dairy product that comprises of fat and protein components. Butter contributes flavour and texture to baked foods and products. Without it, cakes and pastries would not be rich.

Mostly, unsalted and salted butters are used in baking and food production.

Unsalted butter is a mildly sweet butter that’s best for baking. Because it is not salted, you’re left with the pure taste and flavors of the churned cream, so you can maintain control of the flavors in your baking recipe.

Salted butter has about 1/4 teaspoon of salt added for every 4 oz. of butter. Even though it seems like a small amount, it makes a difference in taste. The extra salt helps the flavors in your recipe pop while also maintaining the freshness of your butter for longer.

Store or preserve butter in the fridge in a grease proof paper or an aluminium foil to keep it fresh. You can also keep it in an air tight container at room temperature for one or two days.

Margarine
Margarine is a spread for flavouring, baking, and cooking. It is a substitute for butter. Although it is originally an extract from animal fats, most margarine today are from vegetable oil. Margarine is a useful substitute for butter in making American Buttercream.

Salt
Salt is an essential ingredient in baking.

The functions of salt in baking include stabilizing the yeast fermentation rate, strengthening the dough, enhancing the flavour of the final product, and increasing dough mixing time.

Another role of salt in baking is preservation. Because salt attracts moisture, it helps to keep your baked goods fresh for longer. Salt helps to balance the sweetness of sugar. Remember not to skip salt in your baking process when your recipe calls for it.

Baking Powder
Baking powder is an essential ingredient in producing baked foods. It is complete leavening agent. It is a combination of Sodium Bicarbonate and powdered weak acid.

Baking powder needs only moisture and heat to activate it. It is usually used in recipes that do not call for an acidic ingredient.

It is best preserved in a dry air tight container.

To test the freshness of baking powder, simply add a teaspoon of baking powder into a glass of hot water. If it bubbles, it is still active.

Baking Soda
Baking soda is completely Sodium Bicarbonate with nothing else added to it. In every recipe that calls for baking soda, an acid is always needed to activate it.

Acids used in activating baking soda include white vinegar, lemon juice, yogurt and buttermilk. Baking soda is usually used in recipes that require an acidic ingredient.

Baking Soda is best preserved in a dry airtight container.

To test the freshness of baking soda, simply add a teaspoon of it to some white vinegar. If it bubbles, it is still active.

Vegetable Oil
Some recipes call for the use of vegetable oil. You can substitute melted butter for vegetable oil in recipes that call for melted butter.

Canola oil is the best for baking. Most vegetable oils will work just fine in cake but be sure to use fine, odourless oil for baked goods.

Cocoa Powder
Cocoa powder is an unsweetened powder that adds chocolate flavour to baked goods such as brownies, cookies, cakes, and various other dessert recipes.

There is unsweetened cocoa powder, natural cocoa powder, dark cocoa powder, Dutch process cocoa powder, and black cocoa powder.

Grey Gardens is a 2009 television drama that follows the biographical documentary of the same name.

The drama went on to win multiple Emmys in the limited series/television drama category. The drama stars Jessica Lange and Drew Barrymore in the lead as Edith Beale Bouvier (Big Edie), and her daughter Edith (Little Edie).

The aforementioned pair spend their life inseparable, as they try to hold on to their family mansion, Grey Gardens, even in its dilapidated conditions.

The family makes front page, and even gets a documentary about their life. This article gets the attention of America because they are cousin and aunt of First Lady Jackie Kennedy.

Both Drew and Lange deliver amazing portrayals of their characters, their chemistry is seamless. The movie explores themes of sacrifice, motherhood, family, and it’s a 9/10.

Unlike most reports, Aeon Flux actually hits the mark. It is Charlize Theron doing what she does best, kicking ass.

Charlize stars in the lead as Aeon, a secret agent who works for the Monicans. The Monicans are a secret group within the community that seeks to overthrow the government.

When Aeon is employed to kill the chairman, she is exposed to a whole new world of revelation. The movie is quite predictable but the story progression is quite entertaining for everyone who is a fan of the genre.

The cast does a fantastic job, especially Charlize, Sophie Okonedo, and Frances McDormand. The cinematography, the images are very unique to the movie, not to mention captivating.

Then this will blow you away. The movie is a 7/10

BABY MAMA.


All you need to convince you to see this comedy is the cast names, Tina Fey and Amy Poehler. If this review ends here and you go to see the movie, you still won’t be disappointed.

When Tina Fey and Amy Poehler come together, it is a match made in comedy heaven for the real-life best friends. Tina Fey’s character, Kate is a single successful business class woman who just discovered she is infertile.

Kate employs the help of a surrogate who soon transitions to become her housemate, all in her attempt to be nice. From here on you know how the story goes, it is quite predictable.

Due to the recent political issues, some part may come off as racist. In the beginning, you hear, “Don’t get a black baby, I’ve had it with all these movie stars, showing off, look at me and my black baby”.

However, the movie is a 7/10, because you kind of expect more from the pair but regardless it leaves your ribs cracking.

Buying a new mobile phone has sort of now been made easier because there are a number of different types of mobile phones available in the market today. This difference ranges from sizes, shapes, designs, styles, and specifications.

1. The Operating System
There are three major operating systems: iOS, Android, and Windows. All of them have their different pros and cons you should look into carefully before making your decision.

Android offers endless customizable possibilities, this is why it is gaining in popularity today.

Hence, if you are craving for a sophisticated look and unique design then iOS is your best choice. Windows may be the last option to catch up with the two other operating systems, but if you love to have an effective camera feature then it can be a great choice.

2. Memory
Phones have two kinds of memory – Random Access Memory (RAM) and Read-Only Memory (ROM). RAM, along with the processor of your phone, determines the speed of the phone and its ease of operation.

The ROM is the memory that is used to store the OS, apps and all the videos, photos and songs that you want to store on the phone.

Therefore, it stands to reason that phones with higher RAM will be faster and those with higher ROM will have more storage. An average user should be happy with a 2 GB RAM and 16 GB ROM. But if you are a heavy user, go for a phone with at least 4-6 GB RAM and 64-128GB ROM. To extend your ROM you can also use a micro SD memory card, but remember, apps that are stored and run from memory cards tend to be slower.

3. Battery
This is a majot issue for countries with electricity problems like Nigeria. If you are the kind of user who is likely to have multiple apps open simultaneously or you take a lot of pictures or you are a heavy consumer of video-streaming and gaming apps. Then you need a mobile phone with a good battery.

Heavy online usage tends to drain batteries faster. If you belong to this category of users, then it is better to go for a phone with a long-lasting battery of about 4500MAH

4. Screen Display
For the best user experience, a phone with a 6 – 6.5 -inch HD or QHD display is usually an ideal option. This will allow you to enjoy a rich media experience while being easy to carry in your pocket or purse. So go for something of this nature.

5. Processor
Much like smartphone cameras, there is a lot of hype about processors with jargon like quadcore, octa core, Snapdragon, MediaTek and so on. Here is a simple thumb rule. Look at the processing speed that is expressed in terms of GigaHertz (GHz).

The higher the speed, the faster the processor. If you are going to do a lot of photo/video editing or play online games and stream videos, opt for a faster processor which will be extremely beneficial to you.

6. Camera
Something important to note is that the camera or image quality does not come as a result of just MegaPixels. Good quality Photos are a function of factors like ISO levels, aperture as well as the speed of autofocus.

If you are likely to take a lot of pictures, then go for a phone with a 16 MP camera that has an aperture of f/2.0 or lower, for good results even in low light. If your use of the camera is not likely to be heavy, a phone with an 8-12 MP camera and aperture of f/2.2 should be fine for you.

7. The Budget
It is important to determine the price range that you can afford before buying a phone.

TOP MISTAKES IN UNIBEN CLEARANCE
Uniben usually specifies the dimensions of the passport (Usually 1*1) and the background to be used. Using a wrong password background is an issue.

Make sure that the DATE of birth on your WAEC/NECO Certificates should be same as those used during your Post UTME application. If there exists any variation get an Affidavit in any court around to that effect.

Having different names in your documents could pose a barrier during clearance. Ensure to enter your correct details.

You should not have more than two sittings in your waec or Neco.
If the SSCE result you are to use for the UNIBEN clearance is up to Two (2) years or older, your original certificate is thus ready, ensure to use it during the online clearance. Don’t use the print out.

Also, your Local Government “CERTIFICATE OF ORIGIN is needed for the clearance. Go to your local government area to obtain one.

Get your birth certificate or swear an affidavit. Ensure the dates tally in all your documents.

To ensure you are ready to abide by the rules, you will be required to swear two affidavits. They are Affidavit of Good Conduct and Non-membership of secret courts, those could be done in Warri/Benin, don’t Panic!!!

Your Original JAMB Result and Jamb/Uniben Admission letter are needed.

You need a file to arrange your documents in an orderly manner.

You need money to photocopy documents, opt in for clearance, plus miscellaneous.
