For the first paragraph, check the website of Deye. I'm sure they have a distributor in Lagos. You can go for their 5kva inverter and their 5kwh battery.
For the second paragraph, set up a small 12v system with 1kw hybrid inverter and 12v 100ah Lfp battery or you go for solar generator with 12v 500w/1kw pure sine wave inverter and 12v 100ah Lfp battery.
Most of the solar generators are built with msw inverters and lithium ion. Check the datasheet/specification very well before you strike a deal.
ADVICE: I really understood what you passed through in the past, but that shouldn't make you to be too rigid in your decisions. Let the past go and move on. If most of us here narrate our experience, disappointment, frustration and the losses we've encountered with people in this solar business, you will be surprised. We've learned, we're now stronger and we're still calling people and striking deals them. Lol
There are people that may like to offer professional advice but when they look at the construction of your message, they just ignore it.

Thank you for your patient feedback Sir. I deeply appreciate. Can you please give a specific brand in Lagos Nigeria for the solar gen based on your desceibed specifications? I am considering getting the solar gen first to manage and then get a solid 5kw inverter with 10kwh LiFePO4 battery and 20 Jinko panels later this year before Dec. My Monday to Friday, I am away from the house because of work from 7am to 8pm. So I basically need a solar gen I can manage when I am home and over the weekend. Something to carry 2 laptops, 1 standing fan and one 55 inch LG smart TV. Thanks.

Boss, there are several types of Lithium; Lithium-ion and Lifepo4, are the two most common types in the market. Lithium-ion is the one with the higher fire risk. Lifepo4 has less likelihood of catching fire.

LIFEPO4 = Lithium (Li) Iron (Fe) Phosphate (Po)

and Lifepo4 is the ones being majorly coupled and sold on this thread. So, have no fears.

5.5kw pv & max 10kwh battery are more than enough.

Just power your AC by 11:30am and put it off by 4:30pm.

Use timer to time the AC to run for 3hrs (9pm - 12am) and your battery should carry you till next day.

In RE management is the key.

Confirm if your indoor unit has this kind of display when you put it on inverter mode. Notice the Battery Logo under the 0.6KW digit written "INVERTER" inside of it.

The difference is, this model retains it's memory of the inverter mode setting when you switch it off and on from either switch or remote controller. Another difference is you can be chilling @16 degrees with less than 600w power. My 1.5hp takes between 620w and 480w @16 degrees in inverter mode.
Note the 484-492w on the Smart Load port. This because one of my 1.5hp is presently turned on.

I learnt this applies to this NEW GEN COOL B Models (GEN COOL + by LG).
I have attached their model stickers for reference.
I believe mine is the same. What inverter system do you use that gives you that load visualization?

SRNE is good (have not personally used one) based on my research when I wanted to get mine.

It was my 2nd option then behind Growatt. If you're in Lagos try and go to their office and buy it to avoid stories or order directly from them if you're outside Lagos.

In this case why not go for a higher wattage of panels to be able max out your roof space and at the same time maximize your yield.

1st decide on the inverter you want, then confirm its parameters matches with your proposed system design.

Bro 20 panels is a lot of space. I am considering a 5kva SRNE inverter with 5.12kwh LiFePo4 battery although I might increase the battery to 10kwh depending on finances and then 10 panels × 550kw

Oh, great, then you can ignore the extra Panels and MPPT CC as suggested, your are good to go with your plan, But your AC will be your ENEMY is this setup. You must find a way to time it to work only during PEAK SUN HOURS and when Grid is available or better still, replace the AC with the new models LG Dual Inverter 1.5hp (GEN COOL B) you will be glad you did.
But the AC I am referring to is an LG Dual Inverter.

Add external MPPT between 80A, 100A or 120A to accept the second array.
Since your inverter is possibly has 1 MPPT, and might have a PV limit of 6000w max, it's can't charge your battery and power your loads at the same time during sun up. This is because the load you mentioned is between medium to high load, introducing an external MPPT to the setup takes care of the charging during the day. While the inverter utilizes the array connected to it to power your loads and will still charge the battery if your load reduces.
Thanks. A lot of things to consider. First, don't know if my landlord will allow up to 20 solar panels on the roof. He will allow 10 for sure but 20 is a lot. Second is also the financial factor. But your proposed design makes a lot of sense to me.

On a good day you should be generating over 4kwh from your panels which should be able to run your AC for 5 to 6 hours a day (I run my AC from 11am to 4pm).

For the fridge you can reduce the thermostat to allow for night usage then as for the rest you can use, monitor and adjust your loads based on your battery drainage.

But if you can, get a 10kwh or 7.6kwh battery.

The two key words you have used here, "budget and management" do not really corresponding with the energy demand listed here. Lol.
I will advise you reduce your loads so that you will be able to manage the entire system effectively.
AC can come up by 12 noon on sunny days and go off by 3. If you mistakenly keep the AC on till 4, part of the stored energy in the battery would be removed to support the running of the 2hp AC and the stored energy left in the battery may not sustain you till the following day depending on your night loads.
Though the watts of the fridge and water dispenser are unknown but I would advise you should keep them on over night.
Try and reduce the the number of the energy bulk at night.
Whenever the weather is not friendly, do not think of putting on the AC. I hope you have done enough research on that inverter.

I don't know much about SRNE inverters. Is it a good product please?

Is this your setup an OFF-GRID or Will you still DEPEND ON GRID sometimes?
Because from all other suggestions you are getting, people are ignoring to do a math on how you intend to recharge your 5.12KWh Battery Bank and Power your LOADS at the same time with a less than 5.5KWp Array if you are planning an OFF-GRIS setup. (Oh yes, just because your are installing 10x500w doesn't mean you will get 5.5KWp, don't say I didn't warn you)

My suggestions to you were based on OFF-GRID Setup.

Matter of fact any solar setup that cannot work 100% off-grid still makes you a slave of the grid.

What is worth doing is worth done well.
Not off grid. And I said for budgetary reasons meaning na there my power reach financially.

Only use the AC whenever your batteries are fully charged or getting close to being fully charged and on clear weather/sunny days majorly. The rest of the load is fine.
Forget night usage on AC until you're able to increase your battery capacity to at least 15kwh. Again, the rest of the load is fine for your intended use. Day and night

Your load is too much for your battery, the minimum is 10kwh. Na you won use AC 24hrs. Pañels size is ok for a 10kwh battery.

I read it wrong, use it during the afternoon, from 12noon to 6pm. This depends on how low you depleted your battery over night.
I work Mon to Fri and away from home 7.30am to 8pm. It is really the weekends and ocassional public holidays I am worried about.
