The 'rewire' has messed up the wiring of one of your fans. You may need to reverse the connection. It's an easy fix, if it is the problem. What will give it away is the finding of one of your fans blowing air outwards (confirm this first).

As for your fans working immediately you turn the keys, your thermostat may have been bypassed. Hence, doesn't control the workings of the fan anymore..but I assure you it is not the cause of the overheating. That may only affect your fuel economy.

Did anyone work on your a/c or disconnected your cooling fans recently?

One of the two fans, the one which runs with your a/c might have had its wires reversed. That way, it would be blowing outwards rather than suck in air to help cool the radiator-condenser complex.

This scenario could lead to what you've described.
