[size=13pt]~Must have been really good!! I share the same sentiments to some degree about certain Foods. . .However I cant get my head round enjoying Pepper soup just for the heck of it! To me its like broth you eat to feel better when you're sick! grin

[size=13pt]~Nigerian Spiced Goat Meat Pepper Soup Recipe~

Ingredients

• 1kg goat meat or mutton (cut with the bone)
• 1l water or stock
• 1 onion, chopped
• 75g Pepper Soup Spices
• 50g ground hot chillies
• 50g ground, dried, crayfish (or prawns)
• 25g chopped wild mint (substitute watermint or garden mint)
• 25g chopped utazi leaves (substitute dandelion leaves, for their bitterness [older leaves are better in this case])
• salt to taste1kg goat meat or mutton (cut with the bone)


Method

Wash and cut the meat into small pieces. Add to a pan with some oil and fry until coloured. Add a little stock and the onions and ground chillies. Season with salt, bring to a boil and simmer for about 40 minutes, or until the meat is tender. Add the pepper soup spices and the remaining stock and cook for a further 15 mnutes. Add the crayfish, chopped mint and utazi (or dandelion) leaves and stir then allow to simmer for 5 minutes. Seve hot in soup bowls.[/size]

•  Maggie Seasoning
•  Black/white pepper
•  Chilli pepper
•  Clove of garlic
•  Tomato puree
•  Plum Tomatoes
•  Optional Choice of Meat: Goat Meat,Cow Trotters,Beef
•  Also optional Diced Potatoes

Healthy Recipes~

~Citrus Potatoes With Blackened Cajun Chicken~

Prep Time: 5 mins
Cook Time: 16 mins
Serves: 4


Ingredients

• 4 boneless, skinless chicken breasts

• 3 cloves garlic, crushed

• 2 tbsp Cajun seasoning

• 500g Charlotte potatoes

• Zest and juice of 1 lemon

• 50ml olive oil

• 1 tbsp chopped parsley



Method
Make 3 slits in each chicken breast but not all the way through. Rub over the garlic and sprinkle over the Cajun seasoning. Place under a preheated grill for 7-8 minutes on each side, until cooked throughout.

Meanwhile, slice the potatoes into 4 and cook in boiling water for 10 minutes until tender, and drain.

Mix together the lemon zest and juice, whisk in the oil and add the parsley, season well. Add the potatoes and mix well.

Serve warm with the Cajun chicken.



Smoked Haddock Fishcakes with Garlic Mayo

Ingredients
• 700g potatoes, diced
• 500g frozen smoked haddock, defrosted
• 100g frozen peas
• Pinch saffron (optional)
• 1 clove garlic, crushed
• 100g mayonnaise
• Oil for shallow frying


Method
• Boil the potatoes for 10 -12 minutes until tender. Drain and mash. Allow to cool.
• Place the fish and peas in a large frying pan and cover with water. Bring to the boil and simmer for 5 minutes. • • • Drain and allow to cool.
• Meanwhile, to make the aioli soak the saffron in 1tsp boiling water for 1 minute then add the garlic and mayonnaise and mix well.
• Mix the potato, fish and peas together, season and mould into 8 fishcakes. Heat the oil and shallow fry in 2 batches for 3-4 minutes on each side until golden.
• Serve with salad and mayonnaise.

Childbirth is definitely the worst pain I have experienced and endured. It hurt. I thought i was going to pass out. I could feel the baby doing whatever it was doing in there trying to get out. It was the wierdest feeling of my life.  No position was comfortable. I sat, I stood, I walked, I crouched, I rolled.Labor left me incoherent and seeing things. I was just begging God to save me from this baby.
I was begging for that epidural like it was crack. I needed relief. Ive never begged for anything like that. As soon as i got it i felt instant relief. My panic subsided and i was calm. As soon as my baby came out I was crying more in relief than anything else. It was like I had been set free.

I was kind of traumatized. Physically i was ok. But mental recovery was a long time coming. A looooooooong time. Still havent done it again.  undecided
