Hi, do you mean the yam should have been soaked in water before frying? If yes warm or room temperature water

Yes, you can soak in water( room temperature) before frying. You can also add water to your oil while frying, but not too much.

Oww, okay thanks for the reply. Have always wondered what I was doing wrong that makes my yam crunchy and bitter. One of the reason I dislike fried yam

Another question though, how long am I required to soak it before frying and can I then spice it up right before frying

Slice the yam, wash, salt in a bowl and add a little water into the bowl of salted yam. Pour into the fryer with little water. It will give you this akara seller moist fried yam.
