Hola Mary, as a professional chef, one doesn't just present food just like that, you have to garnish your dishes. All these leaves I used are garnishes. And garnishes as a fine dinning chef are usually herbs. I was trained as a fine dinning chef, I dare not use garnishes on dishes.

I still limit it when cooking the locals. All I post here are just freestyles and me catching cruise. If I would present dishes in a fine dinning style, then you and most might not even understand this is a local dish. Because it will be presented in an elegant and elevated style.

I think I just have to stop here, because if I should go deeper I won't pass the knowledge I want to.
