The best sausage rolls in the world
This is perfect for breakfast; just serve with warm milk or tea

On the journey to make my first sausage rolls, I discovered that the best sausage rolls ain’t made with the normal sausage (franks) that is being sold in the Nigerian market. I suffered to look for this type (third pic).

…long story short, I mixed the sausage with fresh herbs from my garden: dill, basil, thyme, rosemary, parsley, etc and some sauces (soy & oyster)

I made this January and they were super juicy on the inside as I grated some fresh mozzarella cheese before rolling. I might have to recreate this next week.

Diced chicken
Sliced mushrooms
Cream cheese
30g butter
Chilli flakes/paste / ata rodo / dry pepper (any would suffice)
Fresh parsley
Spices/salt /knorr cubes

Marinate the chicken with the spices
Melt the butter in a pan, add chicken , when cooked add mushrooms
Fry till tender
Add cream cheese
Add a spoon of chilli
Stir till fully cooked
Add fresh parsley
Serve

Pancake & Tea for breakfast

Ingredients:

•Flour 500g
•Sugar 150g
•Salt 1/2 tsp
•Yeast 1/2 tbsp
•Nutmeg 1/2 tsp
•Water 2cups

Process:

- Mix all the dry ingredients in a mixing bowl.

- After mixing, create a well in the middle, add the warm water (but not all at once), and mix mix mix, until the batter is smooth and stretchy.
Make sure your batter is neither too thick nor too light.

- Cover and keep in a warm place for at least 1hr to rise.

- After the batter is risen, then proceed to fry.
Make sure to mix the batter again before frying, to beat out the air.
If not, the puffs will soak up too much oil.
Also, ensure your oil is plenty enough for deep frying.
