Due to the high cost of fresh and processed Tomatoes, most Restaurant operators, Mama put owners and most households now device a cheaper means to make Stew. Since we can not do without eating Stew.

They now use dry Pumpkin with dry fresh Tomatoes. It is usually in 60:40 ratio. That is, 60% is dry Pumpkin while 40% is dry Tomatoes. The Pumpkin is to increase the quantity of the Stew, while it maintain the original Tomatoes flavour, aroma, taste and color.

Pumpkin is a highly nutritional food. It is used to prepare varieties of meals.

I have used the fresh one before and it's fine, it's common in benue state, tiv community to be precise.

Not as Nigerian stew. But it’s a similar process of cooking both. Sautéing some onions, peppers, choice of meat and your puréed or cubed pumpkins.

It doesn’t taste like Nigerian stew to me but it’s delicious by itself in its own class.

I don’t really think it’s weird but I get that if someone isn’t used to eating it, might find it difficult to adjust or use it to replace stew.

I personally won’t use it to replace stew. I might try this his method just to see if it’s similar to stew for the sake of experiment

.Ugwu leaf can be used to prepare Egusi Soup, Groundnut Soup and vegetables. While the other pumpkin is only used to Cook Groundnut Soup (I stand to be corrected) I have tasted both Ugwu leaf and the other leaf Soup.
