Well
What you can do is to plug your gains into fixed income securities
You could alternatively plug it in NIDF shares, cos they are in a way kinda fixed income ish with quarterly income distribution....
The alert they sent me last week was really something

I'd recommend fixing it or mutual funds. I currently get more than 22.5% on my fixed income. I've been using Cowrywise for about 2years now

When investing and making great profits, at what point do you actually enjoy the gains in terms of benefits to oneself(buy a house, take a vacation , maybe a car etc) without the guilt of oh I could have reinvested this profit and made more gains.

No one here can provide a perfect answer to your question. We all face the same dilemma.
What most people do is to set thresholds or targets and then weigh the cost-and-benefits of each scenario or option.
Then you take action when the time comes or target is achieved.
Sometimes your permutations work perfectly, other times it may not.
Sometimes you may have to abandon your earlier plan when a new and better opportunity arises. Hence, you have to monitor the market and your stocks very well.
Sometimes, may also decide not to sell and rather keep the shares if you are very sure of the future potential and possible gains that you can make from a particular stocks.

But remember that not everything can be 100% certain at all times

1. Put the money in money market funds for now or leave it in your stock account.

2. Research for MOAT stocks in other sectors that you don't already have in your portfolio.

3. Buy them with the money in MMF when the dip comes.

Personally, I set a target and stick to it. e.g. 50% of my profit goes to a certain project...

There are times the 50% will be reinvested...

Always use 10% of your total passive income per annum to upgrade your life.
