The secret is because it is been cook with firewood and before the party rice dried up the down will get burnt. You cant get that flavour when using gas or stove unless firewood my thought

You just mentioned it! Firewood or charcoal! I once worked in a fast food where we resorted to using charcoal when gas was scarce but we found out that the taste of the jollof rice became better, hence we didn't go back to the use of gas for jollof rice even when gas became available!

Na different people spilt wey dey enter d rice dey make am sweet....people wey dey cook that kind rice dey reach. Like 7.....it goes like this in Yoruba....shey eti fi ata Si as she dey ask spilt dey enter d rice....anoda one shey eti fi Maagi si, anoda person shey eti fi Alubosa is etc....that's what gives D flavour....lol

Its the bayleaf. Try putting some bayleaf in ordinary white rice, you will see that it has that characteristic flavour. Even if u put it in yam porridge....it will still have the jollof rice flavour. wink

my mum thinks am appalling because of my excitement at the prospect of eating party jollof rice. I even go to the extent of gate crashing because that taste is just unbeatable.
as wonderful a cook as my mum is, when she ventures into jollof rice, I only eat it to make her happy. Call me anything but I have a lust for party jollof rice, one that beats my lust for women. (no exaggeration)

If you dnt have a firewood make sure u perboil ur rice nd saute it till it gets slightly burnt.
That's how I make my jollof rice, yet, it doesn't taste like that of a party.

Like people said, it seems it's the presence of smoke from firewood that makes the difference. . .

I wouldn't know what that is because I normally don't eat at most Parties/weddings.


But whatever the taste is that you all are raving about, I would also attribute some of that taste to the poor hygienic conditions under which most of them are cooked..

My mom always tell me the secret to a very tasty food is by firewoods. So true. Believe me, there is a huge difference between occasion food and homely made food.

Op 3Things from my close observations;
1. The taste is slightly different when cooked with hot red coals or firewood compared to cooking jollof on gas stove.
2. The taste of the tomato paste or as is known here as tomato puree.
3. Of all seasoning cubes knorr takes the crown..chicken or beef.The seasonings and herbs and the cook preparing the mix is equally important.

Go through food section,some siatas there are gifted fingers. Cheers.
