Well done AY, but you need to step up, it is either the resolution of your pictures is low or your camera is not good enough. Also, your food somehow looks uninviting. See the kind of knife on that table. I think you should change your cooking utensils.

Mr delicious, i am sure your food tastes great, but you see if you are trying to sell your market online then presentation is key!

We dont need see the bent pots and pans used to cook it. Or you slaving over hot fire.... please go and invest in proper serving and presentation dishware, get a good camera, and learn how to garnish food for presentation properly.

If i wanted tasty fiesta, do you think i want to see dodgy looking plastic bowls or makeshift foil packs on my serving table? Or would i order stuff if i cant make out if its pizza or moimoi. The answer is no!

In looking for a caterer, people want someone that can provide excellent service and presentation as well as cooking good food. Even if your jollof tastes like angel gabriel gave you salt from heaven to make it , if you splatter it anyhow on a plate...no one will take a second glance.

If it is something one cant recognise, it should be so attractively presented that people can just order it just because it looks good!

Also cross check your spelling of your food names and make sure you are using the right words. The dish is called tasty FIESTA. and not FESTER which unfortunately means to rot or something offensive to the senses!!

Ingredients are

Onions,
Red Bell peppers - tatase
Scotch bonnet peppers - atarodo
Iru / dawadawa( locust beans)
Vegetable mix of choice- i used ugwu and spinach
Palm oil
Meat stock
Crayfish, dried shrimps
Meat combo of choice.


Method:

Note 1: I always pre-steam my veg to cook it partially and remove alot of the water first so it doesnt go into the soup. ( washing and squeezing alone never does it for me )

2: i use the chopper attachement of food processor for the peppers and onions ad blending makes it too smooth for my liking, but you may want it differently

3. I am actually not sure if i like seeing iru that much in my food so i blend half of what i use with the peppers and use the rest whole.

4. I also blend the heads of he dried shrimps with my pepper mix rather than throw away.... ( i am frugal like that)

So i basically whack the pepper mix, palm oil, crayfish, shrimp, Iru and meat stock in a pot to boil or fry away, after the pepper mix is cooked, i add the meat and leave it to reduce further.

When it gets to the "dryness" level you are happy with, add the veg. Season to your taste.

That's all.

I dont believe its a must to use either iru or shrimps,

This is just my own way of cooking it. I hardly have iru at home and use it only sparingly. Some people believe it is the star ingredient in many a soup recipe and the taste is different without it but If you dont like it omit it, your cooking method should suit your taste and what you like. .
you can use any dried fish of your choice instead of shrimp.

Would you believe; Gold all purpose flour. Depending on the quantity, it can come out like amala or pounded yam. Things we do to get the Naija food feel. Smh.
