I know you said you weren't familiar with amala as a swallow. It is also called yam flour, as its made from dried yam, which is grinded into flour/powder

Make una teach me how to make Akamu/Ogi (Pap)

I underrated it until I made 3watery paps 3times I tried and I gave up. I thought it shouldn't be harder than it is right now preparing it since I'm adept in making Custard.... In fact, I have made Custard since my Secondary school days...

I just can't understand how I'm able to prepare a tasty pot of soup and other dishes I consider harder than making a "common" akamu....it isn't common like I've found out..

Help cry

I wanna drink the akamu I made by my hands

Not hard but also easy to make mistake.
Use little fresh or cold water to dissolve the akamu first, it it not be too watery.
Make sure the water to make the akamu with is well boiled, pour in the already dissolved akamu, you can stir while pouring the water to feel the thickness so to know when to stop, or just use your eyes to see and know when to stop.
I hope i tried small.

since you can make custard, Akamu should not be a difficult thing for you.

Here is the simple trick: Any time you make the pap and find out it is too watery, pour it in a pot and place on low heat. Stir continuously as the pap thickens. I hope this helps smiley

When desolving you ogi
Make sure both ogi and water for dissolving is room temperature. Don't use cold water or cold ogi.
After you dissolve, check the consistency of the solution. Not too watery. Not too thick. It should be somehow in-between.
Don't use custard kind of consistency, custard accepts water more than ogi. If you mix ogi the same consistency vwith custard, it will be watery. But be careful so the ogi solutions won't be too think either.

Then pour in your boiled water. Note_ boiled water. Not hot water. Custard will always form once water is hot, but ogi will not. Water must be boiled.

As you pour in the boiled water, increase speed so all the segment of ogi will receive the water same time. Not the one that one part will be good, while the rest is still raw ogi. As you pour,watch the ogi, once the raw colour changes to made ogi. Stop. Then stir .

Akamu is ready.
I hope this helps.
With constant trial and error, you will get it. And once you grab it, even with eyes closed, you will get it right.

...I guess it was the coldness of the Akamu (brought it out of the freezer and didn't wait for it to thaw well) were responsible for those failed times.
