If you have nothing else but that SOA to show proof of funds then carry it along with a letter from the same bank stating that your uncle is the sole signatory to the account, and if possible, an incorporation document that shows your Dad as a shareholder. Just pray the VO you meet wouldn't frown at business accounts, or that you'll be given the opportunity to present those documents if the VO isn't convinced. A personal account is always preferred.
When asked about sponsor, say that the company is sponsoring you, and that it's a family business run by your uncle and your dad is a shareholder.

I would advice you to go online and find out more about MUM because from most of what I have read online it doesn't seem to be a very good school and I think that's the reason why you are being denied study visa. Try to search for reviews about the school on Google and then decide if you want to go ahead with the school or not. Please note that all I have written is just my own opinion . This looks like something UTD can do. It's common in Texas schools. Their deficit is always high

It depends on the school. Mine required a few immunizations.

Immunization is not required if you're going to the US, but some schools mandate it on international students.
