We ended up using goat stew that was left over from the okra I made last time.

But it’s been a while since I made curry. Not a bad idea

It won’t mask the sweet taste of the ripe plantain. As long as you make it light. This one makes it more savory in addition to the sweet and just with a kick of heat because it has pepper in it.

There was a time I spiced it with a blend fresh ginger, onion, a pepper...let's just say ginger and fried plantain are soulmates .

The downside is it gets sticky while frying because of the ginger sad

You'll love it.
Add onion powder and dry chilli flakes if you have, it'll do just fine
