Mango Cake

1¼ cup mango puree
2 eggs
¾ cup sugar
1 tsp baking soda
1 tsp baking powder
1½ cup AP flour

For the mango puree
I don't have a blender so i de-skined and mashed till it looked like something blended but I noticed it affected the cake...the fibers and lumps made some part of the baked cake very soft and inedible. I advice you de-skin and blend till it is very smooth

For the cake
Whisk/mix the eggs and sugar together
Add in the mango puree and mix properly
Sieve in your baking soda, powder and flour
Fold in gently
Pour the batter in a prepared pan
Bake in a preheated oven for about 30 - 40 mins

It really isn't but God has been faithful. My county has very low amount of incidents but we are still very careful.

We have fake summer sha. Summer wey cold still dey catch person.

That being said, use heavy whipping cream and that thick condensed milk for your next attempt. Yum.
Of course it’s not healthy FYI but it’s a once-in-a-while something

grin What about that protest that your state people did? I don’t want to be pessimistic but I’d wait two weeks after that gathering to declare that it’s indeed peaked and now going down.
