Try frying the ripe one, cut them in small round shapes but do not over fry, just fry it the normal way and add a lot of fresh pepper and ginger to it, just like you would do fried meat,, Ikire in Osun state is popular for it's ''Dodo ikire'' which sometimes taste like soft meat, they made use of over ripe plantain though.

Fresh fish would go with it.
