There is XS and also this has nothing to do with Android 11. You only have to increase your DPI from developer options.
As for the column those dot icon at the bottom is what you use to select size.

I use the same phone and like my phone before now the first thing I did was adjust my DPI.

DPI = Smallest Width

I kuku understand all what you posted here and already done that, but still, that column refused to even be selected not to talk of draged to XS
I'll just wait for next update perhaps it will modify it
