I don't know if I did anything wrong, but when the paste was frozen (though I blend it togeter with hot and bell peper) after some weeks of storage the water content increases and after defrosting it was disjointed that it has to be blended again befor it can be used.

Sorry I skipped the part where I boil after blending to get rid of excess water. After boiling you are left with a thick paste

I believe your freezing device was freezing and defrosting probably due to power problems. Anything you freeze nd losses it's freezing will never be fresh.

Please, how do you preserve the tomatoes to make them last longer and still remain fresh?
The first time I bought a basket and refrigerated it, It got frozen and after defrosting it, the taste and look weren't something I like.
But if left without refrigerating it rotted away in less than a week.

Kindly share the best way to preserve it and still maintain the freshness.

When I buy in bulk I blend all. Make some smooth for stew nd some semi rough for suace.
I live in a place where I have 16-20 hrs power everyday. So it is frozen till I need it.
As long as u can make sure your freezer does not defrost it will be fresh whenever you need them.

What is Nigeria's own in all of this, this is a seasonal vegetable and its out of season. This thing happens every year but u lots fail to plan for it nd quick to shout Nigeria.
I bought 2 baskets for 4k5 from Jos in March.
Tomatoes, pepper, onions cost me 16k plus 6k transportation cost.
I don't have any business with Tomatoes buying till November
