This is how I cook mine. Your instincts should tell you the quantities you need for each ingredient 'because I can't help you there as per the numerical value Ingredients Chicken, meat, offals, pomo etc (anyone of your choice or I cook everything) Crayfish, dried fish Palm oil (this is not compulsory to me 'because it contains cholesterol and egusi is already high in that) Grinded tomatoes, onions and cameroun pepper Grinded Egusi Bitterleaf (already washed) or water leaf (but I prefer bitterleaf) Procedure 1) Boil the chicken, pomo etc (but at times you have to put the pomo to boil first before adding your chicken) with sliced onions, maggie/knorr and salt. 2) After about 30 mins, put in the crayfish, dried fish (already washed and broken up), grinded tomatoes,onions and cameroun pepper, palmoil as well though not compulsory for me. Allow to cook for twenty mins. 3) Pour in your grinded egusi and allow the soup to thicken. Leave for a couple of mins. Don't forget to check for salt as well. 4) Add bitterleaf and allow to cook for five mins. You don't have to wait till five mins though but I like my veggies cooked well. Remember your instincts should tell you the right quantites of salt, egusi you need to put in the soup |

Sweet T: aha that makes 2 of us. I cooked for my lab the other day and they virtually cleaned out every single drop of the soup. I couold hardly believe my eyes that white people could like Egusi so much. |

Today, I have successfully cooked Egusi Soup! Thanks to recipe provide by @Stillwater, I was able to cook a pot of Egusi soup. I once tried without guidance during my University days and the result was nothing to write home about. Since then, I gave up. Today, i finally summoned courage and searched for egusi soup in Nairaland and the result is shown below. I enjoyed it thoroughly. Sorry, pictures not too sharp as I had to resize them. |

This is more my thing. Here goes. I have come across like 6 different ways of preparing Egusi soup Iwill however put one acoss to you. This is called Efere Ikon.It is a calabar version of preparing the soup. Ingredients: 1 cup of egusi; 1 cigarette cup of crayfish, 2 small onions, Ikg meat, periwinkles(optional) good stockfish, bitterleaves to ur taste. Lets talk method. Boil meat and/or fish in a little water after a while add a little more water. Add all other ingredients except crayfish . Allow to simmer. Add palmoil.(You may add potash to reduce bitterness of the leaves, if ur stomach tolerates it) Leave to cook for about 10mins.Add crayfish and simmer for another 5 minutes. Serve with eba,fufu,pounded yam, semolina,ground rice. Infact whatever takes your fancy. Hope this helps. Watch out for this up-coming blog on varying your regular cooking for variety. |

Many people eat egusi with rice. I don't know about Hausas, but it's common among Yorubas and Ibos(at least the ones I know) |

Ugu/Ugwu one great vegetable for egusi egusi is good with spinach when a bit of bitter leaf is added. |
