Ukodo is a spicy native yam and pepper soup that is highly nutritious. It contains an amount of vitamin, protein, and carbohydrate that is good for the body. It is an appetizing meal that has special spices which brings out its rich local flavour. Ukodo is native to the people of Urhobo, and most people call it “Urhobo pepper soup”.

Apart from the high nutritional content, ukodo helps to burn fat in the body; it also helps to boost the immune system. It can be served anytime.

Ingredients

•Goat meat

•Cow skin

•Cow tripe

•Dry fish

•Lemon grass

•African nutmeg

•Scent leaves

•Native palm oil

•Seasoning

•Salt

•Diced yam

•Diced unripe plantain

•Crayfish

•Uda

•Onions

Serve hot

Method

•Peel and dice yam and the unripe plantain and set aside

•Grind the spices i.e. African nutmeg and crayfish and set aside

•Boil and season goat meat, cow skin and the cow tripe for some minutes

•Add the grounded spices, yam, uda, onions, with a little water and boil for a while

•Add diced plantain, dry pepper, crayfish, dry fish and a little seasoning

•Add salt, lemon grass, scent leaves and simmer for a little while

•Serve hot with palm oil on the side

This is one of the many dishes that is so perculier n unique to the Urhobos, its the environmental saturday morning breakfast for a typical Urhobo family. Urhobo Wado!!! Okpe Wado!!! Long live Delta state for prosperity.

Looks yummy,except for the lemon grass though.
