He takes the goat first leaving the lion with the yam. Comes back and takes the lion but leaves again with the goat. He then takes the yam back to the lion again @ the oda side leaving behind the goat. He comes back and takes the goat finally that was simple :

Riddle 1- I will take the lion and the yam towards the boat, drop the yam in a part of the river the goat cant reach but I can safely reach to retrive it.
Then I will ferry the lion, drop him and return for the yam drop it with the lion and return for the goat.

Riddle-2. I guess he used the poison hand to open the tap and then after washing used his ckean hands to close the tap that was already laced with the poison by accident.
