Am not sure there is a house you will enter today being christmas and you will see something like fufu (cassava) food, white yam. Its either rice, salad, pounded yam, etc. Is it a must that people will cook rice or any food outsside fufu (cassava) or white yam during christmas?

I think its due to the fact that these foods are local foods.
I think Rice or maybe Beans(not sure), are the two internationally recognized dishes we do eat in Nigeria.

As Christmas is such a special day, people will want to eat something out of the norm.

Actually, before this much civilization, like in the latter part of the 1900's, Rice isn't that much common among folks.
So its kind of a big deal when u prepare rice.
So I believe that tradition has kind of extended unto this time.
