Why is palm wine use for baking in nigeria?does it mean it's got good natural yeast that can ferment and leaven dough?

yes it does.

It also has natural sugar.

However, sometimes the bread tastes a bit sour.

How about making it a business of extracting and packaging the yeast from palm wine instead of using whole drink?It is a loophole waiting to be filled,i think.

there's been research but I'm not sure why it hasnt been commercially exploited yet.

There are just so much to do.We use to drink that shit straight from the palm trees,fresh and organic,taken for granted.
