I wouldn't eat moin-moin if not wrapped in leave, i can managed can but definitely not nylon, not saying nylon moin-moin is bad just so use to leave moin-moin, love the smell.

ingredients
- red beans(Drum or olo two)
- pepper
- tatashe/ bell pepper
- shombo/ chill pepper
- onion
- fresh fish( mackerel, kote)
- eggs
- liver/kidney(optional)
- groundnut oil
- seasoning

method of cooking
- peal bean shaft (leave for 20 minutes inside water),add shombo, tatashe,pepper and onion then grind.
- wash fish into a pot, wash your egg and place into same pot add water(to save kerosene or gas for boiling separately )season, slice onion,add water,boil for 15-20 mins
- wash, season and boil kidney/liver for 20 min ,cut into small seizes ,set aside
- remove egg shell slice into a plate,set aside,can also be use whole
- de-bone fish into a plate set aside

- mix grinded beans for 5-10 min(can use hand mixer) add oil, add fish and stock into it, add kidney/liver add salt, crush or melt Maggi with hot water before adding it(some maggi would refuse to melt ) mix.
- place pot on the fire place leave inside pot or the stick from the leave ,add water.
- pour moin-moin into folded leave add egg then finish folding and place into a pot
- cook for 40-45 minutes, u can take one to check if its thoroughly cooked

NB
the leave or stick u place into pot it not to allow your moin-moin soak in water.
- don't fill pot with water like in the case of nylon,u keep adding water in bit
- shombo is to make moin-moin soft(lé in Yoruba language, not hard ooo)/while tatashe is to make it red
- you can and shrimp, crayfish,smoked fish, ice fish, kidney,liver, heart , meat whatever u desire
- white beans can be used I prefer red though
- you can use palm oil in place of groundnut oil or some people mix both.
variety is the spice of life
