Hello everyone, its time for some yummy delicacy using garden eggs as sauce with boiled unripe plantain.
I have never been a fan of garden eggs until I found a way around eating it after realising the benefits to the body. View more to see the recipe and benefits.
The garden egg plant apart from being a source of vegetable also has numerous health benefits which are essential for the overall development of the human body. Its acceptability cuts across religious, tribal, cultural and ethnic groups in Nigeria, hence the wide usage of the garden egg plant.
Garden egg fruit is beneficial and nourishing to the body because it is rich in vitamin which provides the body with both soluble vitamin and water soluble vitamins; they are rich in thiamine required for normal growth and proper functioning of the heart and nervous system and niacin needed for cellular respiration. Garden egg is one of the anti cancer fruit which has been used for over decades, to fight against cancer and other diseases.
Lets go the kitchen and prepare this sauce.
What you need
8 garden eggs
5 Habanero/scotch bonnet pepper (Atarodo)

4 Knorr cubes
1/2 cup Crayfish
Locust Bean (a little)
2 Dry fish/Smoked fish
1 Onion bulb
1 cup of Palm oil
Salt to taste
2Plantain (Unripe)
Preparation
*.Wash the garden eggs and blend smoothly.
*.Pour the blend in a pot and cook on high heat until it cooks into a paste.
*.While its cooking, pound the pepper, crayfish and Locust bean in a small morta and set aside.
*.Pour the palm oil in a pot on a low heat and add sliced onions. (Do not bleach the oil.
*.Add the garden egg blend and fry on low heat while stirring to avoid burning.
*.Add knorr cubes and salt
*.Pour the pounded pepper/crayfish/locust bean and the washed fish then stir continously.
*.You will notice some of the oil seperating to the top.
*.Turn off the heat and dish out.Plantain
*.Slice the unripe plantain and boil with the back to keep the nutrients.
*.Serve the boiled unripe plantain with the garden egg sauce.You will fall in love with this sauce after an attempt.

Nice one op. You can equally use vegetable oil instead. And instead of blending, mash the garden eggs.

I prefer the mashed garden egg.This dish tastes great.

wow. this is sumptuous. but d recipe my grandma taught us, u boil hot water and soak d garden eggs for 3 to 5 mins. remove from hot water and peel off d water proof-like bark. then mash d now very soft garden eggs. this is also d last to enter d mixture to avoid killing d vitamins. all things remain d same as urs.
