Okay guys, I know there are a lot of us that love food and crave to learn a thing or the other about certain food recipes. We have decided to share some amazing food content for Nairalanders.

Hopefully we would be sharing every weekend. So sit tight and eat good Fooooood!!

1 Roast Leg Of Lamb

Pull out this recipe for those special occasions and your guests will never stop singing your praise. Roast lamb is very tender, tasty and everything good food should be. For even more tenderness you can slow roast at a lower temperature for longer.

Ingredients

1 pc leg of lamb

4 tbsps olive oil

1 tbsp oregano

2 tbsp thyme

10 pcs garlic cloves

1 teaspoon black pepper

2 tbsps hot sauce

3 pcs leek

5 pcs carrot

1 pc ginger

4 pcs stock cubes

1 pc onion

Method

It is best to start the marination process a day before. Using a sharp knife, poke about 1-inch holes around the lamb leg. Finely chop garlic and ginger and insert into the pockets of holes made.

In a small bowl mix the spices and peppers with the olive oil and pour over the lamb. Massage it all over the lamb and allow some to drip into the holes made. Dissolve about 4 pieces of stock cube in hot water and pour over the lamb. Put the lamb into a roasting pan and keep in the fridge to marinate for the next day.

Take out the lamb and allow to sit at room temperature for 1 hour. Preheat the oven to 400°F.

Place the lamb in the oven and allow to cook for about 1 hour 30 minutes. Chop the vegetables and set aside. Once the lamb is done, transfer to a board or plate. Pour the vegetables into the roasting pan, mix and allow to roast for about 30 minutes, to soak up the juices.

Place the lamb and vegetable in a serving dish. You are ready to feast!

2 Banana Cupcakes

Cupcakes are always a good idea...particularly with cream cheese frosting. Super yum!! With this recipe those abandoned bananas on the counter become the star of the moment. Who said cupcakes are only for special occasions? Whip some up today!

Ingredients


2 cups plain flour

1 teaspoon baking powder

1 cup sugar

1 cup unsalted butter

4 pcs banana

1 teaspoon salt

2 pcs eggs

4 ounces cream cheese

2 cups icing sugar

1 teaspoon baking soda

Method

Preheat the oven to 350°F. Line a 12-cup muffin pan with baking paper cups.

Mix 1½ cup flour, baking powder, ½ teaspoon baking soda, ¾ cup sugar and salt in a bowl. Set aside.

In another bowl mix ½ cup butter (melted), eggs, ½ teaspoon vanilla essence and mashed bananas (ideally overripe). Make a well in the bowl with the dry ingredients and pour in the wet ingredients. Combine but do not over mix.

Pour the batter into the baking cups filling them up about ⅔ way, Allow to bake for about 25 minutes. To check if it is done, insert a toothpick and it should come out clean. If not leave to bake for a few more minutes.

To make the cream cheese frosting - Add cream cheese, butter and remaining vanilla essence into a blender and combine until smooth. Mix in the icing sugar slowly until well combined.

Allow the cupcakes cool for about 5 minutes before transferring to a wire rack. After cooling completely, pour the frosting into a piping bag and frost the cupcakes.

3 Peppered Chicken With Utazi Leaves

We are taking peppered chicken to another level by adding the not-so-delicious-but-healthy utazi leaves. The leaves have changed the taste of this international delicacy to a local one. This meal is beyond delicious and can be served alone or as a sauce.

Ingredients


1 kg chicken breast

2 tbsps soy sauce

5 pcs rodo

2 pcs tomatoes

1 bunch Utazi

2 tbsps vegetable oil

2 pcs stock cube

1 pinch salt

Method


Spice the chicken with seasoning cubes and salt. Marinate in a Ziploc bag. Refrigerate for about 15 minutes.

Pour the oil in a fry pan over medium heat. Add in (ground) pepper and tomatoes and soy sauce. Cook well stirring continuously.

Add marinated chicken to the sauce. Cook until the chicken is cooked through.

Garnish with utazi leaves and serve.

4 Pineapple-Strawberry Mimosa

Here is a recipe to try for that brunch you have planned for the family and friends. It is easy to whip up but it is something different. This is a combo of 3 delicious fruits and we know you would agree!

Ingredients

3 cups orange & pineapple juice

75 cl sparkling wine

1 cup strawberries

Method

Thinly slice the strawberries.

Pour the chilled pineapple and orange juice into flute of the champagne glasses, filling it half way. Top off with chilled sparkling wine and then strawberries floating at the top.

Garnish each glass with pineapple wedges.
