I've noticed Rice Pudding is a meal that is not eaten in a lot of Nigerian homes for reasons, i cant comprehend but fear not for i would post the recipe down below.

The below ingredients is for 3-4 servings but knowing the way my people eat in this recession period, might as well make it for one person

Ingredients

2 eggs
4 cups of water
6 cups of milk
2 cups of sugar
1.5 cup of long or short grain rice
vanilla extract (for flavoring)



PREPARATION.
Crack the 2 eggs in a plate
One table spoon of vanilla extract in the egg mixture
Mix the above mixture together.

Pour the four cups of water into a deep pot (place on stove or gas cooker)
Pour the rice in the water
Use High heat until it starts to boil (You would want to constantly stair it )
Once it starts to get thick, keep staring until thee is a little bit of water left.

Then you add the 6 cups of milk to the rice while stirring
And reduce the heat by half or 50%
When the milk has started to bubble
Add your sugar until it melts into the mixture
You will notice that it starts to loosen up

Now add the egg mixture gently into the rice pudding while stirring until it has blended completely into the mixture

Now when it has been properly mixed well, turn off the heat and pour it in a bowl.

Serve hot or cold (depends on how you like it )

Have ate this made by my muslim friend. Yummy anyways.

i am male but like to eat out of the box sometimes, please which kind of cup is to be use to measure the sugar.
