Roots and Tubers
The tubers are various types of modified plant structures that are enlarged to store nutrients especially carbohydrates. The common ones in Nigeria include yams, cassava, cocoyam, sweet potatoes, and (Irish) potatoes. They are easily cultivated and are the staples in the wetter more humid regions of Nigeria.
1. Mention some of the benefits of taking tubers.
• Generally they supply carbohydrates to the body.
• They are all alkaline forming foods.
• Yam lowers triglyceride levels and helps prevent arteriosclerosis.
• Cassava : very rich in carbohydrates, B vitamins, vitamin C, vitamin K, magnesium, iron, and calcium. Contains very little fat. Have anti-thyroid effects.
*The flour produce from cassava is particularly beneficial in cases of digestive disorders, celiac disease, liver disease, and convalescence from serious disease or surgery and reinitiating solid foods after a period of fasting.

• Potatoes (i.e Irish potatoes) contain carbohydrates, protein and vitamin C. It’s a complete and balanced food which also neutralize excess stomach acid.
• Sweet potatoes: pro-vitamin A, helps with weight loss (contrary to the popular opinion due to its taste).
2. Can eating yam, sweet potatoes, carrot or other tubers make one fat?
• No! Except if fried or you consume more than you need.
• They produce a much greater feeling of satiety than other foods when one compares the amount eaten with caloric intake.
Tubers are specialized vegetables which are healthful sources of carbohydrates and nutrients for the body.
