Not everybody soak the vegetable in hot water before cooking. My dad believes the hot water kills mos of the nutrients. So when cooking vegetables for him, we just rinse the veggies with salt and add to the sauce.

Same here, I learnt from my mum that soaking vegetables in hot water takes away all the nutrients.

Firstly, you tried but from the last picture, it showed u didnt put the efo inside hot water b4 adding it to the stew

this is called blanching of vegetables which is not a compulsory step. I don't blanch my vegs so that the water soluble vitamins are not lost. same reason you are advised to rinse your veges whole before cutting.
