To be honest I have never practiced my profession ever since I graduated. Right now I don't know exactly how to go about this. And practise on your own. Basically, you should be able to prepare simple income statement.
Income less expenses which equals profit. Keep source documents for income and expenses. Income in a hotel would be money paid for lodging, drinks bought etc, expenses would be toiletries, salaries, fuelling for generator etc. You would learn on the job.

you don't need accounting software to start. Meanwhile, it is always an advantage
So, learn it if you can.
