COOKING WITH COCONUT OIL

Unlike many other cooking oils, coconut oil is very stable and can withstand high cooking temperatures (thanks to its high constitution of saturated fats). It’s perfectly suitable for sautéing, baking, roasting, and even frying.

Unrefined coconut oil has a strong “coconutty” flavor and aroma, which is great to use in your recipes if you’re a fan of that profile. If not, go for the refined coconut oil, which is extremely neutral in both taste and aroma. (And if you’re wary of buying refined oils, look for a coconut oil brand that is naturally refined and unbleached.)

To sauté and stir-fry with coconut oil, simply use it in place of the oil called for in your recipes and you’ll be able to kick up the heat a bit higher than if you were using olive oil. Of course, if your oil ever starts to smoke intensely or turn gray/black while cooking, you can assume that it’s been overheated and needs to be refreshed with new oil. Note that refined coconut oil will withstand cooking temperatures up to around 450°F, whereas unfiltered (virgin) coconut oil has a smoke point around 350°F.

Metro Manila (CNN Philippines, February 25) –

Coconut oil, whose health benefits have been proven in the past, will be tested for use as a potential treatment for the novel coronavirus infection.

“That [VCO] is being looked into,” Health Secretary Francisco Duque III told CNN Philippines’ Newsroom on Tuesday.

“We have heard very good studies with regard to its ability to neutralize the viruses, but for the COVID- 19, it is not clear,” the top health official added.

Duque also said the VCO would not be used to treat the viral infection caused by the new strain of coronavirus here in the country until the World Health Organization confirmed its antiviral effects.

He made the reaction following Cabinet Secretary Karlo Nograles' announcement Monday that a former academician from one of the country’s top universities proposed to test coconut oil as COVID-19 treatment amid the absence of a specific treatment.

In a research proposal published on January 31, Ateneo de Manila University Professor Emeritus Fabian Antonio Dayrit and Dr. Mary Newport of Spring Hill Neonatolody in Florida, United States proposed to conduct a clinical study on patients infected with the COVID-19 involving VCO, saying “this treatment is affordable and virtually risk-free, and the potential benefits are enormous.” Nograles said the National University of Singapore has agreed to test VCO as a prophylactic against the COVID-19.

Current evidence suggests coconut oil and its derivatives are safe and effective antiviral compounds in both humans and animals, the researchers noted.

“Several in vitro, animal, and human studies support the potential of coconut oil, lauric acid and its derivatives as effective and safe agents against a virus like nCoV-2019 [COVID-19],” they said...

The Oyo State Governor, Seyi Makinde, has revealed how he fought and survived COVID-19 infection while his quarantine lasted.

The governor, who has now tested negative to the virus, spoke on the 105.9 FM on Monday via a telephone interview.

The interviewer, Mayor Isaac Brown, who said he also spoke with the governor when he was under the quarantine, recalled that Makinde had told him that he ingested plenty Vitamin C, and ate lots and lots of carrots, among others in his fight against the coronavirus.

The governor had also told the journalist that his infrared thermometer had been his best friend during his quarantine period, using it to gauge his body temperature at regular intervals.

The reporter then asked, “Okay, can we know your latest temperature?” to which the governor responded, “Thermometer reads out temperature as 36.4 degrees. You can hear that; my body temperature is 36.4 degrees. So, I still have the thermometer.”

The governor then launched into the various steps he took in getting well.

“There has been all sorts… My very good friend and brother, Dr. Muyideen Olatunji, the one in charge of the Primary Healthcare for Oyo State, came to me and said, look, I am going to send to you this black seed oil, it boosts immunity.
