pls guys am thinking of getting an English dog I currently own a mongrel puppy but I want to buy an English dog but I gat two options on my mind A German Shepherd or a Caucasian Shepherd??

Neither a German Shepherd nor a Caucasian is English. You want an English dog, you go for either the English mastiff or the British bulldog. Or go for a breed obtained from the combination of the two; the bull mastiff.

GSDs are noisy , their body no dey calm down..

Caucasian is better if you don't like too much noise. They only bark when necessary.
