it is called ikokore
i know how to prepare ikokore,
if you have the right yam?
you don't want to use the real yam ,
or else you will get yam porridge.
ikokore will drawl, if you cook it right

Late post, but I just stumbled on it. My mother is a big fan.
Ingredients: 1. water Yam 2. Palm Oil 3. Dried and Fresh Crayfish 4. Salt 5. Seasoning 6. Already cooked meat and diced 7. Smoked Fish 8. Chiili pepper
Preparation: 1. You have to use the correct specie of yam, known popularly as water yam, scientific name is Dioscorea alata . Known as white yam in some places like Asia.
2. Cut up and grate, be careful though because it has the reputation of being itchy. 3. To cook, put a little quantity in the pot, and add some water, gradually put in the grated yam in a folding manner to incorporate some air 4. Add all your ingredients and cook for bout 40 mins and stir occasionally, Please use a non-stick pot 5. Use the quantity of spices your taste buds can accommodate
6. Ready to grub!

Cool, thanks for the recipe, I LOVE yam so i'm going to have to try it. but i got to find that white yam first

oh!! that meal is delicious. all my life in the west, i never tasted it until i went home to visit (East) and granny made it! it was sooooooo yummy  yeah if you can lay your hands on a good specie of water yam, then you are all set. without water yam, your ikokore won't come out well. There is this water yam with wonderful scent (note that there are different kinds of water yam). Nothing to add you posted the recipe exact way it's prepared. Wonder if i can ever come across that water yam in ilu oyinbo sha.

yeah, its a really nice meal, there's also a calabar version of the food, they called it Epanku kwu(pardon my spellling), the only difference is that they mix theirs with cocoyam to make it thicker and wrap it with cocoyam leaves, it makes it so palatable and lovely,

Please make sure it has enough "Orisirisi". Pieces of meat, fish, ponmo, crayfish , all these are what makes it very tasty. Lack of these and the food will not make sense to new "eaters".

n Sista i will advice u change your name from afrikangal to omo oyibo.  I have never heard of this food as I am from the North but the description is mouth watering and will print out the recipe and see if i can whip my self a dish of it.

to prepare ikokore ingredients as above into boiling water addchopped meat of filleted fish preferably dry fish boil with seasonings then add your grated yam batch wise to the boiling stock et al then add palm oil just before you remove from stove please stir when adding palm oil salt the grated yam not the stock.

The pictures are beautiful. I've eaten Ikokore before but its not my kind of thing, though it is a good food. I've never been a fan of yam be it porridge or plain boiled yams.

Let me just say my tongue has a mind of its own  . I eat pounded yams though, depending on the kind of soup but boiled yams and porridge it's a no no. I only try to eat them when there's no other choice and it has to be just one tiny slice.
