Too Much Pepper!!! by 1one: 10:42pm On Sep 25, 2014
So I cooked a pot of stew yesterday and for some reason I don't just know how, the stew has way too much pepper than my taste buds can handle, I don't really know where the excess pepper came from if it's from the meat water or if the grinder had too much pepper in it before it was used to grind my own tomatoes.

I thought I would be able to manage it like that but it's been purging me throughout today, So cheffs and Cheffrestesses grin. Please what can I do to dampen the bite of the pepper.... I can't throw a newly cooked pot of stew away now. cryI thought of adding lots of water but that wouldn't make sense undecided

Add more tomatoes, either fresh blended or tomato paste to d stew,it wil increase d stew quantity but also reduce d pepper concentration

The fresh tomatoes you want to add should be cooked and seasoned so that it doesn't spoil the taste of the stew

Ahhh shocked shocked

I was going to add tin tomatoes inside the stew like that and just mix and warm it.. So If I do that it would change/spoil the taste of the stew?

If the tomatoes is going to be cooked and seasoned, then that's almost like cooking another stew now isn't it

It will, completely. The stew will have an uncooked, tangy taste that will 'slap' while you eat. Nasty sad
Re: Too Much Pepper!!! by Ishilove: 8:27am On Sep 26, 2014
1one, since it is tin tomatoes you want to add, add a little water to the paste and fry it without letting it burn. Add one very small cube of maggi or whatever seasoning you use, a little salt and cook till done, then mix it with the old stew.

Note that you don't have to fry the paste for too long because tin tomatoes are already partly cooked to begin with. You may slice onions into the paste while cooking (my personal favourite) grin

grin grin I can imagine that taste, the type you get from correct Ijebu garri and cold water.

But if I cook the tin tomatoes I don't necessarily have to put seasoning do I?.. if I do the whole stew may now become too spicy after I've turned the new "stew" into the old one

That's right, but remember that the volume of the stew has increased. It means more quantity with the same old quantity of ingredients.

Okay, you may cook it that way. If after adding it to the old stew you notice that the taste is no longer spicy, you can now add more seasoning. If not, then don't bother adding anymore. Good idea! cheesy

Sha don't let it be too oily. Cook it, mix with the old stew then if you notice any diminishing, then you may now add the seasoning and warm. Mix it well so that the spices won't settle at the bottom of the pot.
