make sure the moi moi mixture fills the foil container half way. That way it even when it's being steamed or baked it won't spill.

Thank God you didn't manage to squeeze plantain into this stew though, we members of plantain are tired of been overused by you folks on nairaland. angry

Amis:
Ingredients

5 large green peppers
3 scotch bonnet
1 large onions divided half Thinly chopped
Boiled Goat meat, shaki, ponmo and any other offal of your choice (chopped into small pieces)
Eggs (optional)
6 tbsp of locust bean divided into two
1 1/2 cup of palm oil..
1 tbsp grounded crayfish
Maggi cubes
Salt to taste

Directions

In a blender, combine the peppers, half locust beans and half onion. Blend until almost smooth
Pour the blended pepper mix into a strainer and let excess water drain out
Set another large pot with a tight fitting lead on high heat, add in the palm oil. Bleach the oil for 8-12 minute. Just until the oil changes to a lighter color. Let the oil cool down then return the oil back to high heat, add in the chopped onion and left over locust beans. fry until the onion is a bit golden add the blended crayfish stir for a minute and
add in the parboiled meat and fry until lightly browned (Stir often so the meat doesn’t stick or burn) add in the pepper mix, eggs, salt and maggi. Stir to combine Decrease the heat to low-medium, cook the sauce until oil floats to the top
Remove and discard the excess oil before serving, the point of using lots of oil is to help the sauce fry. Cc..cococandy

Really have not tried it with anything aside from rice so you can try it and give me feedback on how it taste wink
