How to make Egg Muffins

This is the kind of breakfast that makes the morning a good one indeed! High in protein and low in carb, every bite is simply promising. Consider this quick fix as an omelette in hand so you aren't missing anything at all. Garnish to your taste. Yum!

Method

1. Preheat the oven to 350 degrees F and grease muffin pan with cooking spray.
2. Whisk the egg, milk and half of the pepper in a large bowl. Stir in the spinach (chopped), tomatoes (chopped) and onions (diced).
3. Pour the mixture evenly into the 12 muffin pan cups and bake for about 25 minutes or until the egg is fully cooked. Remove the muffin pan from the oven and allow to cool for about 5 minutes then use a knife to loosen the muffins from the cups.
4. Serve each muffin with diced avocado and crumbled feta cheese (optional).

How to make Chocolate Guinness Float




Chocolate is our true love no doubt that was why we choose chocolate for this recipe. We know beer lovers will crawl out to grab this recipe but here is one advice -Drink responsibly! And if you cannot partake because of the beer, substitute with coke.


Method:

1. Scoop 2 big scoops of ice cream into each glass and add 1 teaspoon of chocolate essence into each glass.
2. Pour in half of the Guinness into each of the glass. Serve.

Most Nigerians trying to cut down carb intake would go for this anytime, any day. But buying this along the road leaves us with the fear of eating contaminated food. Take charge of what goes into your belly. It pairs well with stew, moin moin, and Akara.



Method

1. Dissolve the pap in the 50 milliliters of water until it becomes a slurry. Bring the remaining water to boil in a kettle.
2. Pour the boiled water in a circular motion into the dissolved pap stirring vigorously until it becomes a thick paste. Reduce the heat at this point to avoid the paste from turning into lumps.
3. Allow to thicken like custard and add cold water to the sides of the pap in the pot. Cover the pot and allow to simmer for about 10 minutes on medium heat.
4. Scoop a portion of the starchy mixture in water if it sets, then it is ready.
5. Fold the leaves and scoop the starchy mixture into it and allow to cool.
6. Serve with stew, moin moin or akara.

This recipe is more fine art than food – looks colorful and appealing and tastes like takeout, only super-good!

Prep time: 10minutes

Cook time: 18minutes

Servings: 4 units



Ingredients:

3⁄4 cup finely chopped onion

2 1⁄2 tablespoons oil

1 egg, lightly beaten (or more eggs if you like)

3 drops soy sauce

3 drops sesame oil

8 ounces cooked lean boneless pork or 8 ounces chicken, chopped

1⁄2 cup finely chopped carrot (very small)

1⁄2 cup frozen peas, thawed

4 cups cold cooked rice, grains separated (preferably medium grain)

4 green onions, chopped

2 cups bean sprouts

2 tablespoons light soy sauce (add more if you like)



Preparation:

1. Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
2. Allow wok to cool slightly.
3. Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
4. Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip the egg and cook other side briefly; remove from wok, and chop into small pieces.
5. Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
6. Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
7. Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
8. Set out additional soy sauce on the table, if desired.

How to Make Zobo Drink



From a young age, I fell in love with zobo. The rich hibiscus flavor infused with herbs and spices gets my taste buds jumping for joy. Depending on how sweet you want yours, this can easily be tailored. Enjoy this refreshing drink with the family today.

Method
1. Give the zobo (hibiscus) leaves a rinse to wash off dust. Peel and cut the pineapple into chunks.
2. Put the zobo in a pot and pour about 6 cups of water in. Add in the pineapple chunks and allow to boil for about 5 minutes.
3. Peel and chop the ginger and crush the cloves. Pour into the pot along with vanilla essence and allow to boil for about 30 minutes. Check in after a while to see if you need to add in more water, depending on how concentrated you want it. Remove from heat, add in the honey and stir.
4. Leave to cool completely and then sieve out the liquid. Pour the zobo into a glass jug and place in the refrigerator to cool for at least 2 hours.
5. Serve over ice and garnish with lime slices

How to make Korean Beef



To think that this Korean beef recipe comes together in minutes and is better than take out version! It is so cool for busy nights and a good way to avoid pricier meat. This is one Asian recipe that will not give you a hard time sourcing for ingredients.

Method
1. You will need to slice the onions, mince the garlic and cut the ginger into matchstick size.
2. Heat the oil in a large saucepan over medium heat and brown the meat. Drain thoroughly, add the ginger and garlic and simmer for few minutes or until fragrant.
3. Mix the sugar, chilli sauce, corn flour and soy sauce thoroughly in a bowl. Pour the mixture over the beef and allow to simmer for about 2 minutes to blend the flavour and slightly thicken the sauce.
4. Finally, add the peas and stir. Allow to simmer for few minutes. Remove from heat.
5. Serve and garnish with spring onions.

Chocolate Pancakes



We are back again with our favourite breakfast recipe, but this time we've got chocolate all over it. Super yum!.....stuffed and garnished with chocolate. This for us is beyond irresistible and we think you will agree. Spice up your breakfast today!

Method
1 To make the chocolate sauce - put a saucepan over medium heat and pour in whipping cream. Remove from fire and pour in 100 g of the chocolate. Allow sitting for about 5 minutes before whisking until smooth. Make sure the sauce is room temperature before pouring over the pancakes.
2. Crack 1 egg into a large bowl with sugar and beat. Add in milk, oil and mix.
3. Mix the dry items (flour, sugar, cocoa powder, baking powder and ¼ teaspoon salt) in another bowl. Make a well in the middle, pour in the wet ingredients and mix. Chop the remaining chocolate into bits the size of chocolate chips and fold into the batter. The batter should be quite thick and a little lumpy but make sure the flour is mixed in well.
4. Set aside for about 4 minutes.
5. Heat up your frying pan on medium heat, preferably a non-stick pan.
6. Coat pan with butter/oil, whichever you prefer. Pour in ¼ cup of batter into the pan. When you notice bubbles at the top and side (should take about 1 minute), flip and cook the other side for another 1 minute.
7. Repeat step 6 until all batter is exhausted. Replenish pan with butter/oil as you go on.
8. Serve warm and pour chocolate sauce over.

How to make Hot Milk Cake



You have most likely come across this classic cake but still wonder where it gets its name from. As you may have most likely figured, the milk used in this recipe is piping hot, hence the name. Enjoy this delicious cake topped with whipped cream today.

Method
1.Preheat the oven to 350°F. Grease a 9" x 13" baking pan.
2. Mix 2¼ cups flour, 2¼ teaspoons baking powder, ½ teaspoon salt in a bowl. Set aside.
3. Whisk eggs in a different bowl until you get a pale yellow/ lemon colour. Mix in sugar and beat until fluffy. Pour in the vanilla essence and mix.
4.Heat up the milk and butter in a saucepan until it simmers. Add the milk mixture slowly into the egg mixture. Add the dry items and mix slowly until just combined.
5. Pour the batter into the baking tin and allow to bake for about 35 minutes. Insert a toothpick, if it comes out clean then its done.
6. Remove from the oven and allow to cool on a wire rack for about 20 minutes. Use a spatula to loosen the edges and turn over unto a wire rack to completely cool.
7. Slice up the cake to serve and top off with whipped cream.

How to make Chicken, Squash And Spinach Puree



This is perfect for babies getting more comfortable with solid food. If your baby is 6 months+ this is definitely worth trying, they will love it. The variety of ingredients makes this a filling, delicious and healthy meal for your baby.

Method

1. Dice onion, apple (make sure to peel), butternut and chicken breast. Crush 1 garlic clove and set aside.
2. Put a frying pan over medium heat and pour in the oil to heat up. Add in the onions to fry for a few minutes, then the apple, squash, and chicken. Allow frying for about 4 minutes. Add in the garlic and fry for another minute.
3. Pour in about 1 cup of water and crush in ½ chicken seasoning cube. Allow cooking for about 15 minutes.
4. Add in the spinach to cook for about 2 minutes. Blend contents to your preferred consistency. Grate the parmesan cheese into the puree and stir.
5. Best served warm.

How to make Ogbono Soup Under 45 Minutes


Ogbono soup is a very popular Nigerian soup. Many tribes claim this soup as their native delicacy. One thing we are sure of is that even amateurs can prepare this soup. Yes, it is that easy.

Method
1. Pour the palm oil in a small pot and heat slightly until melted. Add the ogbono paste and stir until there are no lumps.
2. Pour in about 1/2 cup of your hot stock or warm water slowly while still stirring. Then keep adding water until you have achieved the consistency you like. Allow to cook for about 2 mins.
3. Add ground crayfish, smoked fish (cleaned, washed and cut), beef (cooked and spiced to your taste), maggi cubes (be careful with how much of this you use, especially if you used meat stock already) and just enough salt to taste.
4. Allow to cook on low heat for about 15 minutes without covering the pot as it tends to pour out. Stir every now and then. If it gets too thick just add a bit of hot water or stock.
5. Add the chopped and washed ugwu leaves and allow to simmer for about 2 minutes.
6. Serve hot with any swallow of your choice.

How to make Toast Bread Under 5 Minutes



Method
1. Using a cutter, make a hole in the center of the bread and discard the cut-out.
2. Pour coconut oil into a frying pan and allow to heat up.
3. Put bread into frying pan, break one egg into the center of the bread, sprinkle salt. Cook until slightly brown. Flip to the other side and cook until brown.
4. Repeat step 3 until all the bread is exhausted.
5. Using a brush, garnish with honey.

Method

Spicy Barbecue Chicken Wings - Barbecue over Asun grin grin

Barbecue wings are a staple appetizer at many restaurants around the world. However, we in Nigeria love spicy food and so we have incorporated the right type of kick into our barbecue sauce. Use as much pepper as your heart desires!

Method
Preheat the oven to 375°F.
Prepare the sauce by blending the rodo, garlic and barbecue sauce together. Do not blend till smooth, the seeds of the rodo should be quite visible. Set aside.
Place chicken wings in a bowl, add ½ teaspoon salt and ½ teaspoon black pepper. Mix well and place in the foiled lined baking sheet. Cook for about 10 minutes on each side.
Bring the wings out of the oven and pour the fat from the tray away. Dip the wings in the barbecue mixture and return to the oven.
Cook for about 10 mins and then turn over and brush with more sauce. Allow cooking for another 10 minutes.
Serve hot and garnish with diced spring onions.

How to make Catfish Pepper Soup

This recipe can also be called "Point And Kill". First and foremost, pepper soup is bae then when you are having it with catfish (fresh or smoked), just imagine yourself sitting on a throne with a crown on your head because you are fit to be a king/queen

1. Wash the fish with alum until it is no longer slimy.
2. Cook the fish with chopped onions, salt and knorr cubes. Cook for about 7 minutes.
