So this weekend I just felt like taking my boys out for a treat, but cash was not readily available to do the needful. On my way back home I saw two sizable fishes, both weighing about 1.2kg at the cost of N2,000. I decided to buy them and make a fish barbecue for my boys at home.

Ingridients

Fresh Pepper, (straight from the back yard)
Onions
Galic
Ginger
Scent Leaves (I don't know the real name)
Seasoning
Salt

here are the fishes. Cleaned with warm water to remove all traces of sliminess. Guts removed and properly washed with cold water and salt. I had to slice the sides for the marinade to get in.

I have a pepper tree right in my backyard. I had some pepper already plucked, sliced onions, garlic and ginger and then grounded together.

At this point, I had to start the fire. Coal is usually better in preparing such barbecue because it doesn't smoke.

I had to mix all the condiments and then use it to marinade the fish.

Apart from the pepper, onion, ginger and garlic I grounded together, I added some more spice for flavour and taste.

Fish marinated and wrapped with foil paper. Because of the skin texture of catfish, if you lay it directly on the grill rods, it will stick to it and even scatter. So I always wrap in foil paper.

Place on the grill and turn the fish every 3 to 5 minutes so it cooks evenly.

Boiled white rice and sauce was available and the fish was served with rice. It tasted nice I must tell you. It was worth the stress. Best eaten outdoor, just by the grill.
