What preservatives do you use for your cakes? Which is the best?......let's discuss!

A good cake does not need preservatives. Why should I add preservative to a cake that is meant to be eaten within few days?
I don't use preservative for my cakes ,I make sure I use the freshest of ingredients, I use a clean/sterilized work surface.
Is the cake meant to be kept forever? I don't subscribe to use of preservatives in cake and we should try to discourage the use of it. We have preservatives in virtually everything now.
My cake stays @ room temperature for more than 4days. It starts to dry out the 5th day but not spoilt
When freezed it stays longer
Who even wants to keep a delicious cake forever?

Op, smaller sizes of cakes meant for family consumption or personal consumption would definitely not need preservatives but naturally, bigger cakes would. So the topic is a bit sketchy.

the question here is what preservative is better? whether used in big or small sized cake is not the issue... don't forget that brandy or any form of alcohol is preservative too

Do you add liquid milk to your cakes? Someone told me to add preservative to a cake if i'm adding milk

the first to comment beat me to the answer. A good cake does not need preservative as it is not meant to stay for ever. However, some wedding cakes that are fruit based or fruit cakes in general tend to stay longer than normal because of the fact that the dried fruits used are soaked in rum, brandy or the likes. I do not add milk or water to my cake only if the recipe calls for milk but definitely not water. The use of preservatives in cakes should be discouraged as some of these so called preservatives (not the alcohol) have adverse effects.

I believe the no preservative thing can only work for small cakes. Wedding cakes definitely needs preservatives.
Decorating a wedding cake can take days already and well, i like to be done with my cuatommer's cake right before before the D-day.

what of the powder preservative, is it effective? How is it used.
The issue with brandy or any other alcohol is that you cannot use it for sponge cake or angel cake

The powdered preservatives is also effective although i dont really like it koz of how it makws the cake texture.
To use it however, adf it to your dry ingredients..... Say 1 teaspoon to 2 & half cups of flour and then see how it works

The best preservative for breads and infact all baked food with yeast is calcium propionate.

The best preservative for cake and infact all baked food without yeast (baked with soda or baking powder) is sodium propionate.

This slow down the activities of microbes while allowing all baking ingredients to retain their original texture and quality, allowing the baked food to last longer.

What are Natural Preservatives?

Natural preservatives are additives that slow the growth of spoilage organisms like mold or bacteria in baked goods. They also function to limit changes in color, texture and flavor.

Natural preservatives, mainly spices and plant extracts, have been used for many centuries in baking. Today, consumers are looking to steer clear from artificial additives and preservatives.

Natural preservatives used in baked foods which allow for a longer shelf life can be classified several ways:

Antimicrobials

Moldy foods are unsightly, have off-flavors and are often dangerous. Good sanitation practices and packaging control can help minimize contamination but there are also natural preservatives that help.

Vinegar (acetic acid): Acetic acid is a weak organic acid which can penetrate cell membranes and inhibit cell growth by increasing intracellular acidity.

Lactic Acid Bacteria: Lactic acid bacteria can produce molecules such as organic acids, fatty acids, hydrogen peroxide, and bacteriocins (such as Nisin) that can inhibit mold growth.

Plant Extracts: Thyme, rosemary, cinnamon, clove, lemongrass, capsicums, bay leaf, ginger, garlic, and basil have been shown to disrupt cell membrane processes. Finding an effective level without changing organoleptic characteristics of the food product can be a challenge.

Cultured products and their metabolites: These are produced from fermentation of whey, wheat or corn syrup products with a standard dairy culture. Actives are mixtures of propionic, butyric, citric, lactic acids and peptides that can inhibit mold growth.

Antioxidants

Oxidation causes undesirable flavor changes, rancid off-notes, changes in color and loss of nutritional value. Antioxidants slow down the start of fat oxidation process by donating hydrogen atoms. This self-propagating reaction is not reversible and is seen predominantly in fats and oils as lipid oxidation.

Rosemary extract: The carnosic acid naturally present in rosemary acts as an anti-oxidant and can help to boost energy levels in the body.

Vitamin E (tocopherols): Mixed tocopherols are resistant to high temperature food processing steps and have good solubility in fats and oils.

Vitamin C (ascorbic acid): It functions as an antioxidant by forming double bonds and scavenging oxygen.
In summary, if you're looking for organic ways to preserve your cake, you could try one of the above methods.
