Yahuah CLEARLY states the purpose of the PASSOVER judgement is a culmination of judgements against the ELOHIM (gods plural) OF EGYPT.

Plague 1. Water into blood:
Against Hapi god of the Nile

Plague 2. Frogs: Against Heket goddess of Fertility who is depicted with a frog head

Plague3. Lice from dust: Against Geb god of the Earth

Plague 4. swarms of flies: Against Khepri god of creation, depicted with the head of a fly

Plague 5. death of livestock: Against Hathor goddess of Protection

Plague 6.ashes turn to boils & sores: Against Isis goddess of Medicine

Plauge 7. hail rains down fire: Against Nut- goddess of the Sky

Plague 8.locust sent from the sky: Against Seth god of Storms

Plague 9 three days of darkness: Against Ra the sun god

Plague 10. death of the first born: Against Pharoah & Khnum, also spelled Khnemu, ancient god of fertility, depicted with the head of a male lamb.

The Pharoah was worshipped by the Egyptians because he was considered to be the greatest Egyptian god of all. It was believed that he was actually the "son of god" or Ra himself, manifest in the flesh.
Khnum supposedly created mankind on a potters wheel. There are ruins of temples to him archaeologically found all over Egypt. For Hebrews to sacrifice & eat a lamb would have been the ultimate insult to the priests of Khnum.

You can see the concern about sacrificing a lamb earlier in Exodus 8, Pharoah says do that craziness out in the wilderness away from us! Which is why when Yah told Moshe to do it in their presence it was such a big thing:

Exodus 8:25 "And Pharaoh called for Moses and for Aaron, and said, Go ye, sacrifice to your God in the land. 26And Moses said, It is not meet so to do; for we shall sacrifice the abomination of the Egyptians to יהוה our elohim: lo, shall we sacrifice the abomination of the Egyptians before their eyes, and will they not stone us?"

It's pretty clear.
