Okra Fungi

INGREDIENTS:

-cornmeal
2 tbsps butter
-salt for flavor
-1/4 tsp of pepper and
1-1/2 cups of fine yellow
2-1/2 cups of boiling water
10 oz. package of
-frozen cut okra

METHOD:

In boiling water add the frozen cut
okra. Cook until just barely tender.
Bring 2-1/2 cups of water to a boil in
a medium sauce pan.

To make a lump free fungi, mix about
-1/4 cup of the cornmeal with -3/4 cup of
water in a separate small bowl.

Add this mixture back into the larger
pot of boiling water. Then, add the
rest of the cornmeal into the pan in
a slow steady stream, while stirring
constantly.

Now add the boiled cut okra along with
the cooked cornmeal. Mix well, stir in
the butter, salt and pepper.

Next let it simmer for about 5 minutes
more. Now serve the okra fungi piping
hot with some boiled fish on the side.

Serves: About 8 persons

i microwaved some noodles . . . stumbled on a shop that sells authentic indomie chicken peppersoup brought right 4rm Naija, and meeeenn . . . i can eat this everyday!!!

seriously tho', could any1 posting kindly post pix of their cooked dishes ehh, i'm on a diet but i love to stare at pictures of lovely food,  tongue yes, i'm a certified food perv, i even saved some1's fried rice pix as my wallpaper . . . embarassed tongue
