I think you meant Black Baptists. The "American" baptists or white baptists or officially the Southern Baptists are nothing like the black baptists (or black preachers in general) in terms of emotional display. If anything, the pastors and their services are very boring. They generally do not sing while preaching.

OK. To answer your question directly, black singing or music is interwoven with the slavery experience. Music is one of the few things slaves were free to do (I think Bible reading was another one) and it kept them sane. The linked video is inspiring:

i think it has a lot to do with the emotions. The black baptists are reaching out to a people with whom they share a common heritage.
