In interviews with several top officers of the Nigerian Customs and Excise, correspondents of Saharareporters have been told that members of Umaru Yar’adua’s immediate family as well as his close friends are Nigeria’s most notorious smugglers.

In separate detailed interviews, our sources described how 52-year old, Alhaji Dahiru Barau Mangal, Yar’adua’s closest friend and adviser, has emerged as the country’s top cross-border smuggler. The officers also named Hajia Turai Yar’adua, Yar’adua’s wife, as well as her daughters as big players in the burgeoning smuggling rings.
One of the sources, who said he was involved in leaks to the Nigerian press about a ring of high-powered smugglers, said their whistle-blowing was aimed at publicizing a well-known fact. He stated that he and other concerned officers knew that no Nigerian newspaper would have the courage to publish the names of those involved. “That’s why we decided to contact Saharareporters,” said the officer.

“Before Yar’adua came to power, Alhaji Mangal’s smuggling activities were confined to the northern part of the country. But in the last two years, he has extended his smuggling activities to other parts of Nigeria,” said one of the customs officials.

The officers revealed that the shadowy Mangal had built a fortune by smuggling petroleum products through the Republic of Niger. However, with his friend Yar’adua in office as usurper president, Mangal began operating across all Nigerian border entries unhindered. Our sources disclosed that, in some instances, Mangal’s smuggled goods are escorted by Nigerian soldiers in and out of Nigeria. “Only a customs officer who is looking for death will dare to delay his smuggling trucks,” said one of Custom officials told Saharareporters that Mangal’s smuggling operations have changed both in their nature and scope. “He used to be a direct smuggler, dealing mostly with petroleum products,” one of the officers said. Then he added: “Now, his operation includes the safe delivery of contraband goods on behalf of a variety of other smugglers to any destination in Nigeria. All kinds of dubious smugglers hire him to smuggle in their goods for them.”

The officers, who work in different parts of the country, stated that Mangal used to own a relatively small fleet of trucks before Yar’adua came to power. But they estimate that Mangal now owns a large fleet of more than 1,600 long haul trucks with which he picks up and delivers goods without paying customs.

A customs source at the Murtala Muhammed International Airport in Lagos and the Mallam Aminu Kano International Airport (MAKIA) told our reporter that Mangal occasionally uses cargo planes owned by MANGAl Airlines (an airline managed by his younger brother) to deliver goods into Nigeria. “We cannot stop him or even try to collect duties because we know that presidency officials would intervene directly,” he said.

Our sources identified Dikko Abdullahi, recently promoted to assistant controller general of Customs, as the main link in the department to Mangal’s expanding smuggling operations. Dikko Abdullahi has received rapid prominence in the Nigerian customs since Yar’adua came to office; he was promoted from comptroller to assistant comptroller general in a short time. A source in Aso Rock told our correspondent that Dikko, who is married to a "sister" of Hajia Turai Yar’adua, is being groomed to take over as comptroller general of the Nigerian Customs. The source revealed that several competent and senior hands were prematurely retired from the Customs to pave way for Dikko Abdullahi’s ascension to the CG position. Abdullahi, also said to be Yar’adua’s distant cousin, hails from Musawa local government area of Katsina State.

He was recently transferred from Seme border, where he oversaw Alhaji Mangal’s and Hajia Turai Yar’adua’s smuggling activities, and made a member of the 14-member Nigerian customs management team composed of ACGs and DCGs of Customs. He owns one of the biggest houses in the Jabi district of Abuja, where he brokers smuggling deals.
Our sources detailed how Turai Yar’adua’s first big financial windfall came when Customs auctioneers were directed to auction confiscated textiles to the “first lady” and her daughters. The contraband goods, seized during the regime of President Olusegun Obasanjo, were auctioned off to the Yar’adua family for what Customs officials described as “a token fee.”

One source in Abuja also revealed that Mrs. Farida Waziri, chairperson of the Economic and Financial Crimes Commission, has been “carried along” by the criminal smuggling network. The network’s involvement of Mrs. Waziri is to ensure that her agency does not scrutinize Mangal’s illicit activities as the EFCC did in the past. To keep Mrs. Waziri happy, the smuggling network has made her a regular beneficiary of auctioned contraband goods. Our informants revealed that the controversial EFCC chairperson, who is embedded with numerous corrupt public officials, has used aliases to disguise her identity in the auctioneering deals.

Saharareporters has obtained copies of five of such transactions between Mrs. Waziri and the “Joint Disposal Committee Overtime and Abandoned Goods.” The documents show that a variety of contraband goods, including electronics and vehicles, were sold to Mrs. Waziri under the names of “Amina Sambo of 5 Zaria Road, Kaduna”, “Elizabeth Chukwu of Market Close, Aba”, “Mariam Haruna of 3 Kwai Road, Jos”, “Esther John of 10 Emeka Close, Enugu”, and “Tabitha Joshua of 2 Pam Road, Jos”. All the transactions were done on May 4th 2009.[/b]

The Economic and Financial Crimes Commission (EFCC) yesterday sealed off the Ikoyi, Lagos home of former Chief Executive Officer of Intercontinental Bank, Mr. Erastus Akingbola.

Akingbola’s six other houses in Lagos and London may also be sealed off today.

The commission has ordered eight banks to freeze over N346.1billion in Akingbola’s accounts.

It, however, said it has limited Akingbola’s access to only N1.4million per month for living expenses and legal services.

EFCC chair, Mrs. Farida Waziri, ordered that 12, Ruxton Road, Ikoyi, Lagos, be sealed off yesterday.

A source said: "The EFCC chair took the action in line with a court order secured by the commission on December 31.

"We have so far taken possession of the residence in Ruxton. We will seal off other houses in Lagos and London on Wednesday (today) based on the Mutual Legal Assistance Treaty with the United Kingdom (UK)".

The six other houses to be sealed off today are: Property at Milverton Road Ikoyi; Amazing Grace Plaza, Ligali Ayorinde Street, Victoria Island, Lagos; No 2, Bedwell Road, Ikoyi (suspected to be owned directly or indirectly by Akingbola); 26, Chester Terrace, London, England NW1 4ND (suspected to be the residence of Akingbola); No 65, Gove-End Road, London (suspected to be owned by Akingbola) and No 8, Connaught Street, London W2 2AH-England.

EFCC spokesman Femi Babafemi confirmed the story.

He said: "Our operatives went to Akingbola’s house to implement the court order."

Findings revealed that Mrs. Waziri has also written eight banks to freeze Akingbola’s accounts.

A document obtained yesterday named the accounts and banks as: "Special, current, savings, deposit or domiciliary in the name of Akingbola (and parties bound by the order) in Intercontinental Bank Plc (including accounts with numbers -0001200000029420; 0001210000005334; 0111001000352735; 0111001000352745; Access; Zenith; Fidelity Bank-02740201003714; Skye; First Bank of Nigeria Plc(in the name of Bankinson Nigeria limited) Associated Discount House Limited; and Intercontinental Bank (UK) Limited.

"The Mareval sums include N346, 185, 841, 243.75billion being the (a) total amount comprising the 28-count charge against the said Akingbola in (FHC/L/CS/443c/09) less the sums in counts four and five thereof being the subject of a civil recovery action in England against the said Akingbola by Intercontinental Bank Plc and (b) other sums in Naira being proceeds of economic crimes for which the said Akingbola is to be charged.

"The amount of £1,085,515million being the total amount which prima-facie investigation evidence shows were proceeds of economic and financial crimes by the said Akingbola".

Apart from the accounts, Akingbola’s shares and equities in 11 companies were frozen.

The companies are: Intercontinental Capital Markets Limited; Tropics Securities Limited; Summit Finance Company Limited; Tropics Finance and Investments Company Limited; Octopus Securities Limited; Regal Investment Nigeria Limited; Chartwell Securities Limited; Intercontinental Registrars Limited; Intercontinental Securities Limited; Yankuri Nigeria Limited; and Associated Discount House Limited.

The order, granted by Justice T. Abubakar of the Federal High Court, Lagos reads in part: "That an order be issued as specified in the form of the Schedule to the EFCC Act 2009 directing the Managers or such persons in control of the financial institution in Schedule I to this application to freeze all the bank accounts held directly, indirectly by or for the benefit or on behalf of Dr. Erastus B.O. Akingbola within Nigeria being accounts recipients of proceeds of economic crimes by Dr. Erastus B.O. Akingbola pending conclusion of trial of the said Akingbola.

"It is ordered that all assets being proceeds of economic crimes, held directly, indirectly by or for the benefit or on behalf of Dr. Erastus B.O. Akingbola within Nigeria listed in Schedule II to this application be temporally attached pending the conclusion of trial of the said Akingbola.

"I grant order of Mareval Injunction pending trial of the said "Akingbola, restraining the said Akingbola, his wife, Dr. Anthonia Tolulope; his children, relatives, solicitors, servants, associates, trustees, agents, privies and companies from removing, alienating, disposing of or dealing with or diminishing the value of assets whether held directly or indirectly or for his benefit within the jurisdiction of this court up to the amount set out in Schedule II."

Criticism I can take well enough, being spoken down to with total disrespect is something I do have issues with however, especially when I am volunteering my time an efforts.

Abuja — Opposition politicians under the umbrella of Mega Political Party Summit and National Democratic Movement (NDM) will soon meet over the continued absence of President Umaru Musa Yar'Adua from the country.

President Yar'Adua left Nigeria for medical treatment at the King Faisal Hospital and Research Centre in Jeddah, Saudi Arabia, 43 days ago.

The planned summit is coming as governors elected on the platform of the Peoples Democratic Party (PDP) will converge on Abuja today to deliberate on the state of the nation and the ongoing electoral reform.

According to their Chairman, Dr. Bukola Saraki, the meeting would deliberate on some national issues, including the Anambra State governorship election slated for February 6, while its members would also be briefed by the National Chairman of the party, Prince Vincent Ogbulafor.

Head of Secretariat of the Mega Summit Movement, Wale Okunniya, while speaking to THISDAY said: "Like the political summit in 1994 by politicians where a position was taken against the military government of General Sani Abacha. This time around, we are planning to organise such a political summit so that a position is taken, because if we continue to keep silent, the PDP will do nothing. The country is grounding to a halt; nothing seems to be working. So the political summit is to enable politicians take a position on the situation at hand. Invitations are being sent out."

Also yesterday, the Action Congress (AC) tasked the PDP and the Presidency to provide concrete evidence that the condition of President Yar'Adua is indeed improving as claimed by some of his aides.

In a statement by its National Publicity Secretary, Alhaji Lai Mohammed, the party said such evidence could be in form of a dated video recording of the President sitting or standing in his hospital room in Saudi Arabia.

It said the President could also use the opportunity to assure Nigerians that he is indeed recovering from his illness and that he was actually capable of signing the 2009 Supplementary Budget that he was said to have signed last week.

On the potency of such video evidence, the party recalled that when former Cuban President Fidel Castro was recovering from the illness that eventually ended his long presidency, he appeared in a video to show he was still alive, contrary to rumours making the rounds at the time, adding that the video appearance ended the rumours.

"It is necessary for President Yar'Adua, if indeed he is recovering as Nigerians have been praying he does, to move fast to reassure his compatriots that the rumours surrounding his ill-health are unfounded. Daily, we are bombarded with scary rumours of the President's health continuing to deteriorate in Saudi Arabia, even as his aides assure us that he is indeed recovering.

"Since the President left these shores over 40 days ago, we do not know who has really seen him or who has not. Information on the state of health of the President should not be left in the hands of unscrupulous spin doctors, the Aondoakaas and the PDP's of this world, who have been muddling the waters just to serve their own selfish purposes," AC said.

The Nigerian version is called scotch-egg (or scotched-egg whichever) Hardboiled egg and shelled egg wrapped in flour mixture and fried.

Note: some people normally add fresh egg in the flour and mixture together, so some buns may actually contain eggs as part of the ingredient (especially home made and on special order)

Dough:
4 cups all-purpose flour
3 tsp curry powder
1/2 tsp salt
3/4 cup (1 1/2 stick) butter
1/4 cup shortening
1/3 cup + more water

Meat:
2 tbsp butter
1 lb ground beef
1 small onion, finely diced
Chili pepper, diced (optional)
1 tsp curry powder
1 tsp dried thyme
1 tsp salt
1 tsp freshly ground pepper
1/2 tsp ground allspice
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 cup beef broth
1/2 cup dry bread crumbs
1 egg

In a large bowl, combine all-purpose flour, curry powder, and 1/2 tsp salt. With a pastry cutter, or your fingers, cut in the butter and shortening until the mixture resembles a coarse meal. Add the water and stir until the mixture forms into a bowl. If the dough is too crumbly, add more water 1 tsp at a time until the dough sticks together. Form the dough into a log. Cut the dough into 10 pieces.

For the meat, set a large pan over medium heat and melt 2 tbsp butter. Add the diced onion and saute until it is soft and translucent. Add the ground beef. Add curry powder, dried thyme, salt, freshly ground pepper, ground allspice, ground cloves, and ground nutmeg. Saute until the meat is browned, breaking it up with a wooden spoon as it cooks. Stir in beef broth and bread crumbs. Once liquid is absorbed, remove the skillet from the heat.

Preheat oven to 400 degrees F. Take one piece of dough and roll out into a 6-inch circle. Fill with 2 tbsp of the meat mixture. Fold the dough over and press the edges to seal. Use a fork to further seal. Repeat with the remaining pieces of dough. Place the pies on a baking sheet. In a small bowl, whisk one egg. Brush the top of each patty with the beaten egg.

Bake for 30 minutes, or until the pies are golden brown.

Makes 10 pies

YOGURT-COVERED RAISINS

2 cups raisins
1 tsp. confectioners' sugar
1/2 cup plain yogurt
1 1/2 cups granulated sugar
1tsp. light corn syrup
2 tbs. butter
1 tsp. maple
flavoring (optional; can use vanilla extract instead)

YOGURT-COVERED PEANUTS

1/2 cup plain yogurt
1 1/2 cups granulated sugar
1 tsp. light corn syrup
2 tbs. butter
1 1/2 tsps. vanilla
8 oz. peanuts (about 2 cups)

Separate raisins, if necessary. In medium bowl, toss raisins with
confectioners' sugar until coated. Set aside. In a large, heavy
saucepan, stir together yogurt, sugar and corn syrup. Place over
medium heat, stirring constantly, until mixture boils and reaches
223° on a candy thermometer, about 10-15 minutes. Remove from heat;
add butter and stir until melted. Add maple flavoring; stir rapidly
1 minute. Add reserved raisins; mix until well coated. Pour mixture
onto large baking sheet. Working quickly, use wooden spoon to separate
raisins into clusters. Let cool thoroughly. Store in airtight container.
Yield 4 cups
(For Pecan variation) Cook the yogurt mixture as described in instructions
for raisins, adding peanuts in place of raisins. They need not be coated
with confectioners' sugar as the raisins do.

Top Ten Early Pregnancy Symptoms

If you think you might be pregnant, you will probably have a hard time thinking about anything else. And since many of the early signs of pregnancy can be attributed to other abnormalities, it can often be difficult to know when the symptoms you’re experiencing are, in fact, pregnancy signs. That’s why we have composed this top ten list of pregnancy symptoms to help women understand what they should expect if they’re expecting.


1. Missed Period

Delayed or missed periods are probably the most common reasons why women buy home pregnancy tests. However, for women who experience irregular menstrual cycles - or for those who simply do not monitor their cycle – other symptoms will be a more reliable indicator of pregnancy. Also, be aware that if you are on the birth control pill when you become pregnant, and seize to continue taking it, then it is likely you will still get a period once you start taking your sugar pills.


2. Nausea

Nausea and vomiting are other common symptoms of pregnancy. Often referred to as "morning sickness", the onset of nausea can actually occur at any time of day or night. And while these symptoms generally do not appear until about a month after conception, many lucky women do report feelings of nausea earlier on, while others never experience it at all.


3. Tender, Swollen Breasts

Beginning about two weeks after conception, the nipple area of the breasts (areolas) will start to darken and enlarge. Increasing hormone levels will also likely result in swollen or sore breasts. Luckily, this discomfort should start to diminish after the first trimester (or about 12 weeks after conception).

4. Fatigue

Can’t seem to wake up even after a good night’s sleep? One of the first signs of pregnancy is intense tiredness; and while we still do not know what causes pregnancy fatigue, it is likely that rapidly fluctuating hormone levels are responsible.


5. Implantation Bleeding

Many pregnant women also report experiencing a small amount of bleeding a week or two after conception as the embryo implants itself into the lining of the uterus. This type of bleeding is lighter in color than a normal period and only lasts for a couple of days. However, any woman experiencing bleeding during pregnancy should seek medical advice, as this could also be a sign of ectopic pregnancy.


6. Enhanced Sensitivity to Smells

No it’s not just an old wives tale – pregnant women actually do have an increased sensitivity to odor, which is why many become turned off by foods and smells they previously enjoyed. Likewise, some may become suddenly attracted to odors they previously repelled – anyone ever heard of bleach cravings?? If you are craving bleach, you should talk to your doctor right away, as this is likely a sign of a vitamin deficiency.


7. Bloating

Are your pants suddenly feeling a little tight? Just as PMS can cause bloating just before a period, hormonal factors during pregnancy can also result in abdominal swelling long before your uterus will start to expand.

8. Increased Urination

Beginning about six weeks after conception, an increase in bodily fluids will cause you to feel the need to urinate more frequently than normal.

9. High Basal Body Temperature

If you’ve been monitoring your basal body temperature to increase your chances of getting pregnant, then you’ll know that if the temperature has been reading 18 for several days in a row, you’re probably pregnant.

10. Positive Pregnancy Test

While many home pregnancy tests boast the ability to detect pregnancy even before a missed period, this is generally not the case. To be reliable, the test should be taken about a week after your period was supposed to begin. So if you do decide to take one before then, be aware that a negative result may not be accurate.

This is served as a snack rather than an appetizer.

Ripe plantains are dipped in a slightly sweet batter made of rice flour and all purpose flour and then deep fried in coconut oil. Deep frying in coconut oil gives a distinctive flavour to this snack.

My mom used to prepare this by adding egg along with other ingredients mentioned below and since I'm not very fond of the smell of eggs I prefer making without it.

This can be easily prepared in a very short time and if you are expecting guests at a very short notice then this is definitely a life saver smiley

Ingredients:
1 cup rice flour
3 tbsp all purpose flour
2 Ripe plantains
1/4 tsp turmeric powder
Sugar-2 tbsp
Salt to taste
Few cardamom seeds crushed
Baking powder-1/4 tsp
Water- for making a thick batter
Coconut Oil for frying

Method:
Peel bananas and cut them into thin slices. Mix all the ingredients except water. Add water slowly and make a thick batter. In a frying pan heat oil at medium heat. When the oil is hot enough dip each banana slice in the batter and deep fry. Remove it from pan and drain off excess oil in paper towels.

What could make this worth $2,000? Other than getting caught up in a mad moment, or trying to impress, or indulging yourself because you deserve it, maybe you're really interested in what goes into it.

It's called The Aristocrat Martini, and has three main ingredients - Remy Martin Louis XIII Cognac, 150 year old Gran Marnier, and a splash of Dom Perignon.

To mix - chill 2 ounces of Louis XIII and 1/2 to 3/4 Gran Marnier 150, pour into a martini glass, then top with Dom. Served with a ruby and diamond encrusted swizzle stick that's yours to keep when finished - and voilà, that will be $2000 to your hostess.

Of course, word has it that one of the Hilton sisters has indulged in an Aristocrat - Martini, that is.

Roast Turkey #1


Serves 8-10
Time: about 3 1/2 hours
INGREDIENTS


10–12 lb. fresh turkey
3/4 cup oil
3/4 cup wine vinegar
Salt and freshly ground pepper
3 teaspoon Worcestershire sauce
3 garlic cloves (crushed)
1/4 teaspoon paprika
1 tablespoon onion juice
Stuffing
DIRECTIONS
Wash turkey well inside and out, then dry. Now blend the next seven ingredients. Pour this marinade over turkey in a large pan and let stand in the refrigerator for eight hours. (Marinade should be basted over turkey during this waiting period at least four times). Before roasting, be sure turkey is at room temperature. Preheat oven to 325°F. Drain the turkey well, reserving the marinade. Fill cavity with your favorite stuffing. Close cavity with skewers and string, and tie legs together. Place on rack on roasting pan. Roast for 2 hours and brush often with the marinade you have saved. Now raise the heat to 350°F and continue roasting for another 1 1/2 hours. During this last cooking period, baste only one time—using every speck of marinade you have left. Before removing from oven, test the bird with a sharp two-tined fork to test doneness. If fork does not come out easily, cook a few more minutes but do not increase the heat.

Roast Turkey #2


Serves 8-10
Time: about 3 1/2 hours
INGREDIENTS


10–12 lb. fresh turkey
Salt and freshly ground pepper
Stuffing
1 cup water
2 cups apricot juice
Flour (for gravy)
DIRECTIONS
Wash turkey inside and out and dry well. Sprinkle with salt and pepper. Pick your favorite stuffing and fill cavity of bird. Tie up cavity with skewers and string and tie legs together. Place turkey on rack in a large roasting pan. Add water and apricot juice to bottom of pan and place over low heat on top of stove. Cover and simmer for about an hour. Take a look from time to time and baste with juice from bottom of pan (add more water if it has dried out). Preheat oven to 350°F and place turkey in same pan (but uncovered) in oven. Roast for 2 1/2 hours, basting about every half hour. Of course, add more water if bottom of pan dries out. Remove bird to a hot platter. Also, remove rack and put pan on top of stove over medium heat. Add flour a little bit at a time and stir constantly so that gravy will not lump. Add more water if necessary.

Christmas breakfast is especially merry when this colorful frittata is on the menu.


Ingredients

* 1 medium onion, chopped
* 1 medium green pepper, chopped
* 1 garlic clove, minced
* 2 tablespoons butter or margarine
* 1/2 cup chopped tomatoes
* 1/4 cup minced fresh parsley
* 5 eggs, lightly beaten
* 2 cups shredded mozzarella cheese
* 1/2 cup soft bread crumbs
* 1 teaspoon Worcestershire sauce
* 1/2 teaspoon salt
* 1/4 teaspoon pepper

Directions

1. In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables.
2. Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

Ingredients

* ~17 lb. turkey
* ~7 lb. duck
* ~3 lb. chicken
* 1 c. brown sugar
* 1 c. salt
* 2 gallons water
* 3 carrots
* 3 celery ribs
* dash sage
* ¼ tsp rosemary
* 2 bay leaves
* 4 peppercorns
* 4 garlic cloves
* 1 onion, halved
* 15 oz. seasoned dried bread cubes
* 8 oz. butter
* 2 c. turducken stock
* Canola oil

Rinse the birds.
Bone the birds.
This is difficult to describe, so read these instructions
Place the bird breast side down on cutting board.
Make an incision to the bone on the right or left side of the spine.
Following the rib cage, cut down along the length of the bird until you reach the level of the wing and leg joints.
Pop the wing and leg out of their sockets and separate from bird. Do not cut the skin.
Continue following the rib cage with your boning knife until you meet the keel bone.
Follow the keel bone down to the skin of the breast.
Repeat on other side.
Separate the skin from the keel, keeping the skin intact.
For all birds, except the turkey, do the following on both sides of the bird:
Cut along the leg bone with the boning knife.
Using the boning knife, peel the meat from the bones and remove the bones.
Cut along the wing bone with the boning knife.
Using the boning knife, peel the meat from the bones and remove the bones.
Set aside the carcasses.
Brine the birds.
Combine the sugar, salt and water in a large 2.5 gallon sealable container. Mix until completely dissolved. Place the meat from the turkey, duck and chicken into the brine and refrigerate overnight.
Make the stock. Put the carcasses, carrots, celery ribs, sage, rosemary, bay leaves, peppercorns, garlic cloves, halved onion and two gallons of water into the stockpot. Place the collapsible steamer basket upside down on top of the contents of the stockpot. Weigh down if necessary. Bring to a boil, then reduce to a simmer and simmer up to 6 hours (until bones are easily broken), stirring occasionally. Pour pot contents through sieve into large resealable container. Refrigerate stock overnight and in the morning, remove the solid fat layer.

Remove the meat from the refrigerator and bring to room temperature.
Make stuffing.
Heat the butter and 2 cups of turducken stock in saucepan until almost boiling. Thoroughly mix with bread cubes in mixing bowl. Allow to cool until it can be handled.

Assemble the turducken.

Lay the semi-boneless turkey on a cutting board, skin side down.
Dust with pepper and garlic powder.
Coat with a ¼ to ½ inch thick layer of stuffing.
Lay the boneless duck on the stuffing layer, skin side down.
Dust with pepper and garlic powder.
Coat with a ¼ to ½ inch thick layer of stuffing.
Lay the boneless chicken on the stuffing layer, skin side down.
Dust with pepper and garlic powder.
Coat with a ¼ to ½ inch thick layer of stuffing.
Fold the chicken, fold the duck, then fold the turkey so that the skin of the back comes together.

Close the turducken
Insert a skewer along the back of the skin to keep it together.
Insert a skewer along the rear end of the turkey, closing the end.
Insert a skewer from the right breast side to the top skewer.
Insert a skewer from the left breast side to the top skewer.
Tie string to top center skewer, run it along the skewer to the left side of the end, then wrap string around the right side of the rear skewer, then wrap string around the left side of the rear skewer, then wrap string around right side of rear middle skewer. Follow right side of center skewer to end, hook around the skewer and wrap around the end of the left breast side skewer. Then bring across to the right breast side skewer, then follow right breast side skewer to left side of center skewer, then follow to end of center skewer where you will tie the string to the skewer.
Make sure the string is tight around the skewers.

Roast the turducken

Coat the rack in the roasting pan with canola oil (to prevent sticking).
Flip the turducken over as you place it on top of the rack in the roasting pan. Rub bird with canola oil. Insert thermometer into the chicken area of the turducken.

Place in 500 degree oven and roast for 20 minutes.
Drop the temperature to 225 degrees and roast until the thermometer reads 160 degrees.
Let the turducken rest for 20 minutes.
